Southwestern Spicy Spinach and Corn Cheese Dip

Ingredients
  

  • 1 cup frozen spinach
  • 1 cup frozen corn
  • 1 tablespoon olive oil
  • 1 clove garlic minced
  • ½ cup sour cream
  • 8 ounces cream cheese
  • ¾ cup of salsa
  • ½ cup mozzarella shredded
  • ½ cup cheddar shredded
  • salt and pepper to taste
  • cilantro for garnish

Instructions
 

  • In a large skillet, heat olive oil on medium heat.
  • Add corn, spinach, and garlic.
  • Saute until cooked.
  • Add sour cream and cream cheese.
  • Cook until these melt, stirring frequently.
  • Add salt, pepper, and salsa.
  • Stir and reduce heat to low.
  • Add mozzarella cheese.
  • Simmer 5 minutes.
  • Remove from heat, top with cheddar.
  • You can melt the cheddar in the oven on broil, or just let the cheese melt from the heat of the dip.
  • Dip in corn chips and enjoy

SPECIAL NOTE

Please know that every gluten free flour blend has a different starch to grain ratio. If you use a blend I didn't test, you may need to adjust your moisture levels in your baked goods.
