Gluten Free Granola Tarts with Grilled Peaches

  • 2 1/2 cups rolled oats (*make sure they are certified gluten free!)
  • 1/2 cup slivered almonds
  • 1/4 cup sunflower seeds
  • 3/4 cup unsweetened shredded coconut
  • 1/4 cup coconut sugar
  • 1/3 cup maple syrup I prefer grade B
  • 1/4 cup coconut oil
  • 1 cup raisins
  • 2 cups vanilla yogurt


  • Preheat the oven to 250 degrees.
  • In a large bowl, add all dry ingredients and mix well.
  • Add maple syrup and coconut oil.
  • Mix well.
  • Fill tart pans half way and then press to flatten up the sides.
  • Bake at 250 degrees for 20 minutes.
  • While these are baking, preheat the grill on medium heat.
  • Remove from the oven and allow to cool.
  • Grill peach halves on the grill for 4-5 minutes each side. (Make sure the grill lid is closed.)
  • Add a scoop of yogurt to the granola tart crust.
  • Top with a grilled peach half and drizzle with honey.
