Easy One Pan Gluten Free Chicken Piccata

Ingredients
  

  • 1 pound chicken breasts (I bought mine thinly sliced.)
  • ¼ cup gluten free flour blend
  • ¼ teaspoon salt
  • 1 clove garlic minced
  • 4 tablespoons butter
  • 1 tablespoon olive oil
  • 1 large leek sliced thinly
  • ¼ cup capers drained
  • ½ cup white wine
  • 2 teaspoons lemon juice

Instructions
 

  • In a skillet, melt butter and olive oil over medium heat.
  • Add leeks and garlic. Saute for 5 minutes.
  • Put flour in a bowl and dredge chicken in flour.
  • Add chicken to the pan and cook until the chicken is almost done. (Turn chicken part way through the cooking so both sides are evenly cooked.)
  • Add wine, lemon juice, and capers. Turn down the heat and simmer. Flip the chicken to make sure both sides are coated.
  • Serve warm. (*Optional, sprinkle parmesan cheese over the top.)

Notes

1. This recipe is so easy to make in one pan.
2. If your kids don't like capers, feel free to increase the garlic to 3 cloves.

SPECIAL NOTE

Please know that every gluten free flour blend has a different starch to grain ratio. If you use a blend I didn't test, you may need to adjust your moisture levels in your baked goods.
