Ingredients
  

  • 2 large eggs
  • ¾ cup cocoa powder
  • 1 cup sugar
  • 1 teaspoon vanilla
  • 1 teaspoon peppermint extract
  • cup coconut oil

Instructions
 

  • Preheat the oven to 350 degrees.
  • In a large bowl, add all dry ingredients, including sugar and whisk to blend.
  • In a smaller bowl, add wet ingredients and whisk to blend.
  • Pour wet ingredients into the dry ingredients (optional add chocolate chips or nuts) and mix.
  • Add brownie batter to mini well seasoned cast iron pans, or a greased 8x8 baking dish.
  • Bake for 20-22 minutes until done.

SPECIAL NOTE

Please know that every gluten free flour blend has a different starch to grain ratio. If you use a blend I didn't test, you may need to adjust your moisture levels in your baked goods.
