Ingredients
  

  • 4 waxy potatoes
  • ½ cup pizza sauce
  • fresh basil leaves
  • ½ cup mozzarella
  • 2 tablespoons parmesan cheese

Instructions
 

  • Preheat the oven or convection toaster oven to 375 degrees.
  • Slice each potato thinly as shown in the photo above.
  • Use a spoon to drizzle sauce between each potato slice.
  • Add fresh basil leaves in between layers.
  • Add shredded mozzarella cheese to smoosh into each layer. Sprinkle parmesan cheese on top.
  • Cover with foil and bake 30 minutes.
  • Remove the foil and bake an additional 30-45 minutes.

SPECIAL NOTE

Please know that every gluten free flour blend has a different starch to grain ratio. If you use a blend I didn't test, you may need to adjust your moisture levels in your baked goods.
