Easy Blackened Shrimp Fajitas

- 2 tablespoons paprika
- 2 tablespoons ancho chile powder
- 1 teaspoon dry mustard powder
- 1 teaspoon cayenne powder
- 4 teaspoons cumin
- 2 teaspoons black pepper
- 2 teaspoons dried oregano
- 1 teaspoon salt
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 2 pounds shrimp
- 2 cups peppers sliced
- 1 cup onions sliced
- 2 avocados diced
- 2 tablespoons avocado oil
- 12 corn or gluten free flour tortillas
In a bowl, add all of the spices and whisk to blend.
In a bowl, toss the shrimp with the spices. Allow it to sit for 5 minutes.
In a pan, add oil and heat for one minute. Add the shrimp.
Cook for 5-8 minutes until the shrimp is done.
Serve with sliced peppers, onions, and avocado.
