Drool-Worthy Gluten Free Banana Bread Pudding

Ingredients
  

  • 8 cups bread cubes
  • 3 eggs
  • ¼ cup maple syrup
  • 2 bananas
  • 2 tablespoons coconut oil
  • 1 cup milk
  • 1 teaspoon cinnamon

Instructions
 

  • Preheat the oven to 350 degrees.
  • Cut the gluten free bread into cubes.
  • In a bowl, add the bananas and smoosh with a fork.
  • In a large bowl, add the eggs, syrup, smooshed bananas, oil, milk, and cinnamon. Whisk to blend.
  • Add the bread cubes and mix well.
  • Allow the bread to sit for 10 minutes to absorb all of the liquid.
  • Pour the bread mixture into a cast-iron skillet and bake for 20-25 minutes.
  • Remove from the oven.
  • Optional: top with vanilla ice cream and caramel.

Notes

You can use any brand of gluten free bread to make this recipe.

SPECIAL NOTE

Please know that every gluten free flour blend has a different starch to grain ratio. If you use a blend I didn't test, you may need to adjust your moisture levels in your baked goods.
