How to Make Gluten Free Savory Crepes

Ingredients
  

  • 1/2 cup teff flour
  • 1/2 cup gluten free flour blend
  • 2 eggs
  • 1 1/4 cup milk or non-dairy milk
  • 1/4 teaspoon salt
  • 1 tablespoon coconut or light oil

Instructions
 

  • Add the dry ingredients to a large bowl and whisk to blend.
  • In a medium bowl, add the wet ingredients and whisk to blend.
  • Pre-heat a cast iron skillet on medium heat. Add oil to the pan.
  • Pour the wet ingredients into the dry ingredients and mix well.
  • Use a soup ladle to pour batter into the hot pan.
  • Quickly hold the handle and tilt the pan in a circular fashion to spread the batter thinly over the bottom of the pan.
  • Cook until you see bubbles in the batter.
  • Use a spatula to flip the crepe and cook the other side.
  • Add your favorite fillings and enjoy!
