Easy Gluten Free Peanut Butter Donuts {Baked Not Fried}

Ingredients
  

  • 2 cups gluten free flour blend * see note
  • cups sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • teaspoon salt
  • cup powdered peanut butter
  • ½ cup milk or non-dairy milk
  • ½ cup peanut butter warmed
  • ¼ cup coconut oil or butter melted
  • 2 eggs

For the Icing

  • cup peanut butter
  • 2 tablespoons powdered sugar

Instructions
 

  • Preheat the donut maker (or oven to 350º F if using a donut pan.)
  • Heat the peanut butter and either coconut oil (or butter) so that they are softened (not too hot that it will cook the eggs though.)
  • In a large bowl, add the dry ingredients and whisk to blend.
  • In a smaller bowl, add the wet ingredients and mix.
  • Pour the wet ingredients into the dry ingredients and mix.
  • Open the donut maker and spray lightly with coconut oil.
  • Add the batter into each donut cavity and close the lid.
  • Cook 7-8 minutes (check it after 5 minutes b/c different brands donut makers cook differently)
  • Move the donuts to a cooling rack.
  • Mix the icing in a small bowl.
  • Dip each donut into the icing.

Notes

  1. You can make these donuts in a donut maker or bake in the oven in a donut pan. Both directions are listed above.
  2. I have tested this recipe with King Arthur Measure for Measure GF, Bob's Red Mill 1 to 1 GF blend, and Authentic Foods Multi Blend. That doesn't mean others will not work, I just have not tested other flours.
  3. If your gluten free flour blend doesn’t contain xanthan gum or guar gum, please add 1 teaspoon.
  4. I used almond milk but other dairy-free kinds of milk will work but I do not recommend canned coconut milk.
  5. These donuts will keep up to 4 days in an air-tight container, or up to 4 months in the freezer.

SPECIAL NOTE

Please know that every gluten free flour blend has a different starch to grain ratio. If you use a blend I didn't test, you may need to adjust your moisture levels in your baked goods.
