Ingredients
  

  • 4 cups potatoes cooked and chopped
  • cup cooked bacon
  • cup shredded cheese
  • cup sour cream
  • 1 clove garlic minced
  • 2 teaspoons fresh chives
  • 1 teaspoon fresh thyme
  • salt and pepper to taste

Instructions
 

  • Add the cooked potatoes and all of the ingredients to a bowl.
  • Mix well.
  • Chill for one hour in the refrigerator.
  • Serve cool.

Notes

1. You can bake or boil the potatoes.
2. I prefer to use russet potatoes in this recipe.
3. This potato salad will keep up to 4 days in an air-tight container in the refrigerator.

SPECIAL NOTE

Please know that every gluten free flour blend has a different starch to grain ratio. If you use a blend I didn't test, you may need to adjust your moisture levels in your baked goods.
