Easy Fresh Herb Gluten Free Potato Salad
A delicious gluten free potato salad. Loaded baked potato salad is perfect for a picnic, barbecue, or cookout.
- 4 cups potatoes cooked and chopped
- ⅓ cup cooked bacon
- ⅓ cup shredded cheese
- ⅓ cup sour cream
- 1 clove garlic minced
- 2 teaspoons fresh chives
- 1 teaspoon fresh thyme
- salt and pepper to taste
1. You can bake or boil the potatoes.
2. I prefer to use russet potatoes in this recipe.
3. This potato salad will keep up to 4 days in an air-tight container in the refrigerator.
