Ingredients
  

  • 2 cups gluten free steel cut oats
  • 1 cup pumpkin puree
  • cup coconut sugar
  • 2 teaspoons ground cinnamon
  • ½ teaspoon ground ginger
  • 1 teaspoon pure vanilla extract
  • 2 tablespoons coconut oil
  • 8 cups water

Instructions
 

  • Add all of the ingredients to your slow cooker.
  • Cover with the lid and cook on low for 4 hours.

Notes

  1. It is critical to use certified gluten free oats if you are Celiac. Cross-contamination runs high in regular oats.
  2. This oatmeal will keep up to 4 days in an air-tight container, or up to 4 months in the freezer.

SPECIAL NOTE

Please know that every gluten free flour blend has a different starch to grain ratio. If you use a blend I didn't test, you may need to adjust your moisture levels in your baked goods.
