Traditional Gluten Free Stuffing with Fresh Herbs

An easy gluten free stuffing with lots of fresh herbs. This sausage stuffing is traditional style stuffing for the holidays.

Ingredients
  

  • 1 loaf gluten free bread
  • 10 ounces raw chicken sausage
  • 1 onion
  • 1 clove garlic
  • 1 ⅓ cups chicken broth
  • 1 teaspoon salt
  • ¼ teaspoon pepper
  • 2 tablespoons fresh thyme
  • 1 tablespoon fresh rosemary
  • 1 tablespoon fresh sage
  • 4 tablespoons butter melted
  • 1 tablespoon avocado or light oil

Instructions
 

  • Preheat the oven to 350º F.
  • Cut the loaf of bread into 1 inch cubes on a cutting board.
  • Place the bread cubes into a 9x13 baking dish and bake for 10 minutes. Stir and bake an additional 5 minutes. Pour bread cubes into a large bowl.
  • In a skillet, add the onion, oil, and garlic. Sauté for 3 minutes. Add the raw sausage and cook until the sausage is cooked.
  • Add fresh herbs to the sausage mixture and cook an additional 5 minutes.
  • Pour the sausage mixture, chicken broth, and melted butter onto the bread cubes and mix well.
  • Put the stuffing mixture back into the 9x13 pan and bake for 20 minutes until done.

Notes

  1. You can use any brand of gluten free bread you like for this recipe.
  2. I use chicken sausage but you can use beef or pork sausage if you like.
  3. To meal prep and make this gluten free stuffing ahead of time, chop up your bread cubes and put them into an air-tight container. If you are prepping these more than 1 day ahead, put the container into the refrigerator. Cook the sausage, onion, and herb mixture and put this into a container. On Thanksgiving, add the bread cubes and sausage mixture to a large bowl. Pour on the broth, mix, and bake according to the recipe directions.
  4. This stuffing will keep up to 4 days in the refrigerator.

SPECIAL NOTE

Please know that every gluten free flour blend has a different starch to grain ratio. If you use a blend I didn't test, you may need to adjust your moisture levels in your baked goods.
