- 3 cups beef chicken, or vegetable broth
- 1 garlic clove minced
- 2 tablespoons olive oil
- 1 tablespoon fresh thyme
- 1 tablespoon fresh sage
- 1 tablespoon fresh rosemary
- 2 tablespoons potato starch
- ½ teaspoon salt or more to taste
- ¼ teaspoon black pepper
In a small pot, add olive oil and garlic and cook for 3 minutes.
Add the broth, spices, and herbs to the pan. If you have pan scrapings, add those too!
Bring to a boil, then reduce the heat to simmer.
Simmer for 15 minutes.
Grab a whisk and very slowly, add the potato or tapioca starch in while whisking quickly.
If you do end up with some lumps, run your gravy through a strainer to remove them.
- You can use chicken broth if you prefer to make a chicken-based gravy.
- This gravy will keep up to 4 days in an air-tight container, or up to 4 months in the freezer.
