One Pot Italian Pasta {Gluten-Free!}

Ingredients
  

  • 1 pound ground beef * see note
  • 3 cloves garlic minced
  • ½ cup onion diced
  • cup bell pepper chopped
  • 12 ounces gluten free pasta
  • 25 ounces pasta sauce *see note
  • 1 ½ cups chicken sausage
  • 1 quart low sodium chicken broth
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • ¼ cup parmesan cheese
  • 1 tablespoon light oil

Instructions
 

  • In a large pot, add the oil, ground beef, garlic, onion, and bell pepper. Cook until browned, stirring frequently to avoid burning.
  • Add in a jar of your favorite pasta sauce, the uncooked gluten free pasta, salt/pepper, and the chicken broth. Stir to mix it together. The dry pasta should be covered by the liquid.
  • Cook for 15 minutes or until the pasta is soft. Add the parmesan cheese and mix well.
  • Serve hot.

Notes

  1. You can use any gluten free pasta, but I highly recommend Jovial or Tinkyada brands because they hold up very well to cooking in a pot of saucy liquid.
  2. Use your favorite jarred pasta sauce or homemade. Make sure to check the label to ensure your pasta sauce is gluten free. I used O Organics Tomato Basil Pasta Sauce.
  3. I used ground beef but if you would like this recipe to be low-fat, use ground turkey or chicken.
  4. This will keep in the refrigerator for up to 4 days in an air-tight container.

SPECIAL NOTE

Please know that every gluten free flour blend has a different starch to grain ratio. If you use a blend I didn't test, you may need to adjust your moisture levels in your baked goods.
