  • 1 box gluten free vanilla cake mix * see note
  • 4 cups fruit (* I used frozen cherris)
  • ¼ cup sugar
  • 2 tablespoons tapioca starch

  • Preheat the oven to 350º F.
  • In a bowl, add your fruit. If you are using frozen please be sure to thaw the fruit first.
  • Add the sugar and tapioca starch and toss to coat.
  • Pour the fruit into an 8x8 greased baking pan.
  • In a bowl, make your cake mix according to the directions.
  • Spread the cake batter over the fruit.
  • Bake the cobbler for 40-45 minutes until the cake is done and the fruit is bubbly.
  • To test for doneness, insert a toothpick into the center of the cake. If the toothpick comes out clean, it is done baking. If you see batter or crumbs, the cake need to bake longer.

  1. You can use and make any brand of gluten free vanilla cake mix. Make sure to buy the ingredients like eggs, oil, and milk listed on the box.
  2. Use any fruit. Fresh, frozen, or canned. You do not have to drain the fruit as it makes a great sauce for the fruity cobbler.
  3. This cake mix cobbler will keep up to 4 days in the refrigerator.
