These crispy long gluten free cheese straws are perfect for snacking. They are easy to make with just a few simple ingredients.

Ingredients
  

  • 2 cups gluten free flour blend * see notes
  • ¼ teaspoon garlic powder
  • ¼ teaspoon cayenne pepper * more if needed
  • ½ teaspoon salt * more to taste
  • 2 cups cheddar cheese
  • ½ cup butter
  • cup water

Instructions
 

  • Preheat the oven to 375º F.
  • Add all of the ingredients to a food processor. Pulse until a dough ball forms.
  • Break the dough into 4 pieces. Place a piece of the dough on a piece of wax paper and roll the dough to 1/4 inch thickness.
  • Cut the cheese dough into strips with a pizza wheel. Twist the strips and place onto a parchment paper lined baking sheet.
  • Sprinkle the cheese twists with salt. Repeat until you have made cheese twists with all of the dough.
  • Bake for 15 to 20 minutes until crispy. (Baking time will vary slightly depending on how thick the cheese straws are.

Notes

  1. I have tested this recipe with King Arthur Measure for Measure GF and Bob's Red Mill 1 to 1 GF blend. That doesn't mean others will not work, I just have not tested other flours.
  2. Xanthan Gum - If your gluten free flour blend doesn’t contain xanthan gum or guar gum, please add 1 teaspoon.
  3. These cheese straws will keep for up to 3 days in an air-tight container or up to 4 months in the freezer. They will get soft but you can crisp them up in the oven at 350º F for 10 minutes.
Variations:
  • Vary the flavor by switching up the cheese. You can use smoked gouda, parmesan, and even pepper jack cheese.
  • Add in dried herbs like thyme or rosemary.

SPECIAL NOTE

Please know that every gluten free flour blend has a different starch to grain ratio. If you use a blend I didn't test, you may need to adjust your moisture levels in your baked goods.
