Ingredients

  • 3 cups beef broth chicken or vegetable are also fine
  • 1 garlic clove minced
  • 2 tablespoons olive oil
  • 1 tablespoon fresh thyme
  • 1 tablespoon fresh sage
  • 1 tablespoon fresh rosemary
  • 2 tablespoons potato starch or cornstarch
  • ½ teaspoon salt or more to taste
  • ¼ teaspoon black pepper

Instructions

  • In a small pot, add olive oil and garlic and cook for 3 minutes.
  • Add the broth, spices, and herbs to the pan. If you have pan scrapings, add those too!
  • Cover and bring to a boil, then reduce the heat to simmer.
  • Simmer for 15 minutes.
  • Use a soup scoop to add some broth to a small bowl. Add the tapioca starch and slowly whisk in the tapioca starch or potato starch into a slurry. (Having lumps in your gravy is one of the biggest challenges you have with making homemade gravy. When adding your starch to thicken your gravy, it is important to mix it in a bowl with the hot broth first. Don't just add the starch to the pot of gravy!
  • Cook for 5 more minutes on low and then serve it hot.
  • If you do end up with some lumps, run your gravy through a strainer to remove them.

Notes

  1. You can use chicken broth if you prefer to make a chicken-based gravy.
  2. Make this brown gravy vegan by using vegetable broth.
  3. If you are nightshade-free, use cornstarch instead of potato starch.
  4. This gluten free brown gravy will keep up to 4 days in an airtight container, or up to 4 months in the freezer.

SPECIAL NOTE

Please know that every gluten free flour blend has a different starch to grain ratio. If you use a blend I didn't test, you may need to adjust your moisture levels in your baked goods.
