Air Fryer Gluten Free Fish Sticks

If you love crispy fish sticks, you will love this quick and easy air fryer fish sticks recipe. I include oven baking directions as well.

Ingredients
  

  • 1 cup pork rinds * see note
  • 12 ounces cod filets * see note
  • 1 egg
  • 2 tablespoons milk
  • 1 tablespoon light oil
  • salt and pepper to taste

Instructions
 

  • Take your cod and slice it into sticks with a sharp knife.
  • HINT: If your fish is wet, pat it down with paper towels. This will help the breading stick better.
  • Add the egg and milk to a bowl and whisk. Add the fish and turn them around in the mixture to coat all sides.
  • Put the fish into the pork rind panko. Make sure it is coated all around.
  • Spray a light oil in the warm air fryer basket. This will help prevent them from sticking. Do not use olive oil. Place the fish sticks in the air fryer basket, then spray the tops of the fish sticks with the oil.
  • Cook the fish sticks at 375º F for 10-12 minutes. If your fish sticks are thick, you may need to cook them a couple of minutes more.

Notes

  1. You can use cod, tilapia, or another mild white fish. Salmon also works, but it may not hold its shape as well as the cod.
  2. There are pork rind crumbs in stores in the bread crumb area, usually in the spice section of your grocery store. You can also buy pork rinds and grind them in a food processor, which is cheaper.
  3. Dip them in ketchup, ranch dressing, or any of your favorite dips.
  4. These air fryer gluten free fish sticks will keep up to 4 days in the refrigerator. You can also freeze them in a freezer-style zip bag. Freeze them flat until they are frozen. Thaw in the oven or air fryer.
Baking Instructions:
If you don't have an air fryer or prefer to bake them, follow all of the directions. Instead of putting them in an air fryer basket, put them onto a parchment paper-lined cookie sheet.
Bake at 375º F for 15-20 minutes, or until crispy. Baking time may vary depending on how thickly you cut the fish sticks.

SPECIAL NOTE

Please know that every gluten free flour blend has a different starch to grain ratio. If you use a blend I didn't test, you may need to adjust your moisture levels in your baked goods.
