Ingredients
  

  • 1 can Bella Portofino Tuna
  • ¼ cup bok choy chopped
  • ¼ cup cherry tomatoes chopped
  • 3 tablespoons mayonnaise
  • ¼ cup chopped carrot
  • salt and pepper to taste
  • 1 large avocado

Instructions
 

  • In a bowl, combine all ingredients and mix well.
  • Cut a large avocado in half lengthwise and remove the pit.
  • Add a scoop of the tuna salad into the avocado. Garnish with optional jalapeño slices.

SPECIAL NOTE

Please know that every gluten free flour blend has a different starch to grain ratio. If you use a blend I didn't test, you may need to adjust your moisture levels in your baked goods.
