Ingredients
  

  • 1 fresh pineapple rind and core removed
  • cup water
  • 2 teaspoons fresh lime juice

Instructions
 

  • Add fruit, water, and lime juice into a Vitamix or blender.
  • Mix until it's liquid.
  • Pour into a freezer safe dish.
  • (I used a metal loaf pan)
  • Freeze for 3 hours until frozen.

Notes

  1. You can prepare this recipe in a Vitamix, blender, or food processor.
  2. You can use canned pineapple. I recommend using one packed in juice and not sweetened with syrup. If you use the canned juice, do not add water.
  3. You can use frozen pineapple chunks.
  4. Store in an airtight ice cream container. It will keep fresh in the freezer for up to 2 months.

SPECIAL NOTE

Please know that every gluten free flour blend has a different starch to grain ratio. If you use a blend I didn't test, you may need to adjust your moisture levels in your baked goods.
