No-Churn Caramel Chip Ice Cream

Ingredients
  

  • 4 cups heavy whipping cream * see note
  • 14 ounces La Lachera Dulce le Leche
  • 1 teaspoon pure vanilla extract * see note
  • ½ cup chocolate chips

Instructions
 

  • Add the heavy whipping cream, La Lachera, and vanilla to a Vitamix or high-speed blender.
  • Blend the no-churn ice cream mixture for 45-60 seconds until the mixture is thick and creamy.
  • Pour the mixture into a freezer-safe container.
  • Top the ice cream with chocolate chips. Cover the container or loaf pan with plastic wrap.
  • Put the container into the freezer for 3-4 hours.
  • Scoop into a cone or bowl and enjoy :-)

Notes

  1. You can make this no-churn ice cream in a Vitamix or high-powered blender.
  2. To make this dairy-free, use a dairy-free caramel, dairy-free heavy cream like So Delicious brand, and dairy-free chips.
  3. Vanilla - Try to find alcohol-free. Trader Joe's has it. You can also use vanilla paste or regular vanilla extract.
  4. This ice cream will keep fresh for up to 14 days in the freezer.

SPECIAL NOTE

Please know that every gluten free flour blend has a different starch to grain ratio. If you use a blend I didn't test, you may need to adjust your moisture levels in your baked goods.
