Gluten Free Derby Pie (aka Chocolate Pecan Pie)

Ingredients
  

  • 1 gluten free pie crust * See notes
  • ½ cup sugar
  • ½ cup brown sugar
  • ½ cup gluten free flour blend * See notes
  • ½ teaspoon salt
  • ½ cup unsalted butter
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 2 tablespoons bourbon optional
  • 1 cup raw pecans
  • 1 ¼ cups chocolate chips

Instructions
 

  • Make your gluten free pie crust. If you are using a store-bought crust, be sure it is thawed to room temperature. See the notes for my easy gluten free pie crust recipe.
  • Preheat the oven to 350º F and put the oven rack in the middle position.
  • In a large bowl, add the dry ingredients. Use a wire whisk to blend them.
  • In a smaller microwave-safe bowl, warm the butter. Don't make it too hot, or it can cook your eggs. You just want the butter very soft. Add the rest of the wet ingredients and whisk.
  • Pour the wet into the dry ingredients. Add hte pecans and chocolate chips.
  • Mix the pie filling.
  • Pour the pie filling into the prepared pie crust.
  • Use a large spoon to spread the batter evenly in the crust.
  • Bake the crust for 30-40 minutes. The baking time will vary depending on the size pie crust you use.
  • Remove the pie from the oven and let it cool on a rack.

Notes

  1. Use a store-bought pie crust or my flaky Gluten Free Pie Crust recipe.
  2. You can use any gluten free flour blend in this recipe, but check to ensure it contains a binder. If yours doesn't, add one teaspoon of xanthan or guar gum to the dry ingredients.
  3. Store the baked pie in an airtight container in the refrigerator. You can store it for up to 4 days. This pie also freezes really well.

SPECIAL NOTE

Please know that every gluten free flour blend has a different starch to grain ratio. If you use a blend I didn't test, you may need to adjust your moisture levels in your baked goods.
