Our little fig tree is not producing many figs yet, so I had to buy a big carton of figs at Trader Joe’s today. Who can resist?

I also can imagine what you are thinking after reading the title of this salad. Don’t start laughing at me for tossing fennel into the mix. I did tell you I am addicted to fennel lately, right?

This is an easy salad to make and it tastes so good. I added a touch of honey to bring out the sweetness of the figs.

Fig and Fennel Salad

Ingredients

  • 8 figs cut into quarters
  • 1 large fennel bulb chopped
  • 2 cups baby greens
  • 2 tablespoons almond oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon honey

Instructions

  1. In a small bowl, combine dressing ingredients.
  2. Mix well.
  3. In a salad bowl, add all vegetables and figs.
  4. Pour dressing over the salad and toss to mix
