If you are looking for the perfect kid-friendly side dish, these carrots are the one you should make next! You are going to love how easy this recipe is to make. Carrots are sweet all year round, and when you cook them with brown sugar and cinnamon, they take them to a whole new level!

The hero of this recipe is the carrots. We get a weekly farm box from a fun company called Ugly Produce. They buy the fruits and vegetables that don’t meet the grocery store’s “pretty” standards. This produce tastes the same, so we love getting this weekly box.

How to Make Brown Sugar Carrots:

There are also many ways to cook the brown sugar-glazed carrots in this stovetop carrot recipe, but this is how I like it because it makes the sweet glaze on the carrots.

  • The first step is to add butter to a pan or cast-iron skillet. Turn the temperature to medium and allow the butter to melt.
  • Stir in the brown sugar, cinnamon, and water.
  • Add the carrots and bring to a boil.
  • Reduce the heat to medium-low and cook, covered, for 30 minutes.

Ingredients
  

  • 1 lb carrots peeled and sliced thin
  • 2 tbsp dark brown sugar
  • 1 tbsp salted butter (*see note)
  • ¼ tsp ground cinnamon
  • 1 cup water

Instructions
 

  • In a skillet over medium heat, 1 tbsp salted butter, then whisk in 2 tbsp dark brown sugar, 1/4 tsp ground cinnamon, and 1 cup water.
  • Add 1 lb carrots (cut any way you like), and bring to a boil.
  • Reduce heat to medium and cook, covered, until carrots are tender and glazed, about 30 minutes

Notes

  1. You can use peeled bagged mini carrots instead of cutting big carrots up.
  2. Feel free to use vegan butter if you are dairy-free.
  3. These brown sugar carrots can be made up to 2 days ahead. They will keep up to 4 days in the refrigerator.

SPECIAL NOTE

Please know that every gluten free flour blend has a different starch to grain ratio. If you use a blend I didn’t test, my rule of thumb is to add more flour if your dough or batter is wet and add more liquid if the dough or batter is too dry!
