Each Thanksgiving, my family has a huge family meal. One-third of our family is gluten free, so my goal is to make food so good that everyone can enjoy it. This is why I am so excited about my new stuffing recipe! It is made with New York Bakery’s new Gluten-Free Texas toast.
This is a big deal for us. We lived in Texas for years; in fact, both of our kids were born there. We loved eating Texas toast back then, well before we discovered we had to eliminate gluten from our diets. If you have had Texas toast, you just know…big, thick slices of bread toasted with butter and garlic. There isn’t anything like it. We haven’t had this comfort food in over 13 years!
If you love crispy garlic toast, this is the stuffing recipe you need to make for your holiday celebration!! It is easy to make with wholesome, simple ingredients and will be the star of your dinner plate! The garlic flavor in this Texas toast stuffing will work with turkey, gravy, mashed potatoes, and any other sides you want to serve!
New York Bakery’s Texas Toast comes in two flavors: Texas Toast and Texas Toast Five Cheese. For this homemade stuffing recipe, I am focusing on their Texas Toast. It is made with real garlic, and it is full of flavor.

- New York Bakery Gluten Free Texas Toast – This recipe calls for two boxes of Texas toast. This is the main ingredient and is what makes this stuffing so good. As of this Fall, New York Bakery Gluten Free Texas Toast is available at major grocery stores, including Publix, Walmart, and Kroger Brands, followed by Albertsons in 2025.
- Sausage – I used mild chicken Italian sausage. There are many brands that sell gluten-free sausage, but I recommend always reading the label and checking for both gluten and hidden gluten ingredients.
- Onions – I prefer to use sweet yellow onions in this recipe.
- Mushrooms – You can use button or cremini mushrooms. I have also enjoyed shiitake mushrooms.
- Chicken Broth – Use low-sodium chicken broth.
How to Make Gluten-Free Texas Toast Stuffing (Step-By-Step)
Step 1: The Texas toast can be prepped in the oven or your air fryer. Cook in the method you prefer. I air-fried mine to get it a little extra crisp for this stuffing recipe.
Step 2: I cooked the toast for 8 minutes at 400º F, then turned it over to brown the other side for 2 minutes. You can also bake the Texas toast in the oven at 425º F for 9-11 minutes.
Step 3: Wash the mushrooms and set them aside. Place a yellow onion on a cutting board. Use a sharp knife to dice the onion into small pieces. Set the onions aside and chop the celery. Slice the mushrooms and set them aside. Thinly slice the sausage and set aside.
Step 4: In a skillet, add cooking oil and let it warm on medium heat for 2 minutes. Add the diced onion and saute until the onion and celery soften. Add salt and pepper to taste. Remove the cooked onion and celery from the skillet and put them into a bowl.
Preheat your oven to 350°F and ensure the oven rack is placed in the middle of the oven.

Step 5: Add the sliced mushrooms and ground sausage. Cook until the sausage and mushrooms are cooked.
Step 6: Add the celery and onion back to the pan and toss to mix them. Turn down the temperature to medium-low and let it cook for three more minutes.
Step 7: Wash and thinly slice the fresh sage on a cutting board.
Step 8: Add the chopped sage to the pan. Stir and turn off the stove.
Step 9: Place the Texas toast on a cutting board. Using a serrated knife, make stuffing cubes from the bread. Place all of the cubes in a large mixing bowl.
Step 10: Add the cooked vegetables and sausage to the stuffing cubes. Add 1 1/2 cups of chicken broth and mix until well combined.
Step 11: Spray a 9×13 pan with gluten-free baking spray. Pour the stuffing mixture into the pan.
Step 12: Bake the stuffing for 25 minutes, or until it looks golden brown. Serve the stuffing hot.

Yes, you can add other vegetables, such as roasted winter squash, cauliflower, and carrots.
To make this stuffing ahead. Follow steps 1-10. Refrigerate the mixture. Bake the stuffing the day you want to serve it, within two days.

- 12 slices NY Bakery Garlic Texas Toast
- 1 ½ cups chicken broth I used low sodium
- 1 cup onion
- 12 ounces mushrooms white or cremini
- ½ cup celery
- 5 links Italian chicken sausage
- 1 tablespoon cooking oil
- 2 tablespoons fresh sage

Notes
- You can prep this homemade stuffing by making the vegetables and toasting Texas toast bread cubes. Mix it together and store it in the refrigerator. Bake the day you want to serve this side dish.
- Store leftovers in an airtight container in the refrigerator. The leftover stuffing should keep fresh for up to 4 days.
SPECIAL NOTE
Please know that every gluten free flour blend has a different starch to grain ratio. If you use a blend I didn’t test, my rule of thumb is to add more flour if your dough or batter is wet and add more liquid if the dough or batter is too dry!
