Caramel ice cream made without an ice cream maker! If you love ice cream, and you want an easy homemade ice cream recipe, it doesn’t get any easier than this no-churn caramel ice cream.

This creamy ice cream is cold and refreshing, and perfect for a hot summer day! This no-churn ice cream recipe is the easiest way to make ice cream from scratch!! Vitamix Ice Cream

A few weeks ago, I decided to do my first Facebook Live video. I am still learning how to do this. I mean, live means you can’t edit out the “bloopers”…like when the cream splashed all over me :-).

It was pretty nerve-wracking!! The good part about making an ice cream recipe video is that you can see how easy this Vitamix ice cream recipe is to make. It blended my ingredients in just 30 seconds!

Bloopers aside, I couldn’t believe how many comments I got from readers who didn’t know how easy it can be to make ice cream from scratch. (*Just see below, I included a video of my live experience for you.)

I dumped the caramel ice cream ingredients into my Vitamix and then froze everything. It was creamy and delicious; definitely as good as any store-bought ice cream :-). It is totally easy to make ice cream without an ice cream maker!!

This easy vegetarian gluten free ice cream recipe is perfect for a crowd, or an ice cream bar. I plan to make a few flavors for our next pool party. This easy ice cream recipe is SO much better than store-bought ice cream. If you want, you can even add some flaked sea salt to make homemade salted caramel ice cream.

How to Make No-Churn Caramel Ice Cream:

Vanilla Paste

I also need to say, I am loving Rodelle’s Vanilla Paste. I used it in this recipe and it really added a splash of sweet vanilla to this ice cream. It is different from vanilla because you get all of the taste from the vanilla beans, without any alcohol.

No-Churn Caramel Chip Ice Cream frozen into a loaf pan, with an ice cream scoop and cones next to it.

I used a bread loaf tin to freeze this ice cream in. You can also use plastic containers. (Don’t use glass!!)

Scoop it out onto a cone or into a bowl…it tastes great both ways!

  1. I love to make ice cream in a loaf pan. It stays cold for a long time so your ice cream doesn’t melt as fast.
  2. Vitamix makes this so easy to make in one container.
  3. Nestle La Lachera Dulce le Leche makes this ice cream burst with caramel flavor!

No-Churn Caramel Chip Ice Cream

No-Churn Caramel Chip Ice Cream

Yield: 6 people
Prep Time: 5 minutes
Additional Time: 3 hours
Total Time: 3 hours 5 minutes

Easy creamy Vitamix no-churn caramel chocolate chip ice cream

Ingredients

  • 4 cups heavy whipping cream
  • 1 can La Lachera Dulce le Leche
  • 1 teaspoon Rodelle Vanilla Paste
  • chocolate chips

Instructions

  1. Add whipping cream, La Lachera and vanilla paste to a Vitamix or blender.
  2. Blend for 2 minutes.
  3. Pour into a freezer safe container.
  4. Top with chips.
  5. Put into the freezer for 3 hours.
  6. Scoop into a cone or bowl and enjoy ๐Ÿ™‚

    This recipe looks like a lot of fun. And I love that you don’t have to churn this to get it right. I wish you had another recipe other than caramel. Unfortunately its not one of my daughters favorites. Maybe I could do something a little different and come out with a cookies and cream or a mint one. Anyway, it looks amazing.

    My husband keeps saying he wants to try to make ice cream at home, I didn’t realize it could be this easy! I’ve never heard of the vanilla paste, but I’ll have to check it out, we use vanilla a lot at our house!

      Hi Carole, I am going to test this out with coconut milk, but it wouldn’t be caramel since the caramel I am using has dairy. Stay tuned and I will create something dairy free and delicious. Do you have any requests? I am thinking fresh fruit of some sort….
