  • Chicken Breast – I like to use chicken breast, but other boneless cuts of chicken will work well.

  • Gluten-Free Pastaโ€”There are many great gluten-free pasta brands. I like Jovial because it holds up well in the sauce.
  • Heavy Cream – If you are dairy-free, So Delicious and other brands now make a dairy-free heavy cream.
  • Cajun Spices – I used Zaitarain’s cajun spice mix. It is considered gluten-free.

Step-By-Step Photos and Directions:

Step 1: If you are not using pre-cooked chicken or rotisserie chicken, place the chicken on a plate and season with the cajun spices, salt, and pepper to taste. You can cook your chicken any way you like. I prefer to use the air fryer because it is quick and easy.

Step 2: Spray the air fryer basket with oil that has a high smoking point. This list of the best oils for an air fryer can help you choose the right oil.

Cook the chicken at 365ยบ F for 10 minutes. Flip the chicken over and cook for an additional 8 minutes.

๐Ÿ‘€ Sandi Says: The chicken’s cooking time will vary depending on its thickness and size. You will know it is finished cooking when its internal temperature is 165ยบ F. I use this digital thermometer to measure the temperature.

Step 3: Wash and chop the onion and bell peppers on a cutting board. I like to cut them into small pieces so they are bite-sized.

Step 4: Boil water and cook the gluten free pasta for one minute less than what is listed on the box. When the pasta is ready, pour it into a colander and rinse it in very cold water. This will halt the cooking process. This will help prevent the pasta from getting mushy.

Step 5: Heat the cooking oil in a skillet on medium heat. Add the pepper and onion and cook for 3-4 minutes until they soften.

Step 6: Place the chicken onto a cutting board and slice it into small pieces.

Step 7: Add the chicken, cream, and seasonings to the pan and cook on medium heat until the sauce boils.

Step 8: Add the cooked gluten free pasta to the pan and stir it to coat the pasta in the sauce. This will also reheat the pasta after it has sat in the colandar.

Step 9: Serve this chicken dinner hot. I love serving this chicken pasta with these Gluten Free Garlic Knots or Gluten Free Breadsticks to dip into the creamy cajun sauce!

Frequently Asked Questions:

Can you add different vegetables to this recipe?

Yes! Feel free to add zucchini, broccoli, mushrooms, or any other vegetables you have on hand.

How do you store the gluten free cajun pasta leftovers?

Store the leftovers in an airtight container in the refrigerator. This cajun pasta will keep fresh for up to 3 days.

Can you freeze meals with gluten-free pasta?

I personally do not like to freeze and then thaw/reheat meals with gluten-free pasta. Gluten-free pasta doesn’t freeze well and tends to get very mushy.

Notes

  1. I used Jovial gluten free rotini in this recipe. Other brands of gluten free pasta will work as well as any shape of pasta.
  2. I used white mushrooms; any mushrooms, including shiitake, taste delicious in this recipe.
  3. Be sure to double check your cajun seasoning is gluten free. I like Zaitarain’s brand. If your kids do not like spice, reduce the cajun seasonings to 1 teaspoon.
  4. Store the leftovers in an airtight container in the refrigerator. This cajun pasta will keep fresh for up to 3 days. I do not recommend freezing the leftovers because the pasta will become mushy.

SPECIAL NOTE

Please know that every gluten free flour blend has a different starch to grain ratio. If you use a blend I didn’t test, my rule of thumb is to add more flour if your dough or batter is wet and add more liquid if the dough or batter is too dry!
