Summer is here, and it has been too hot to use our oven! This easy gluten free cherry cobbler mug cake will hit the spot. Fresh juicy cherries and a delicious cake-like cobbler topping will make you want to make this dessert over and over again.

This simple cobbler is made in your microwave and is ready in under 3 minutes. What better way to satisfy that cobbler craving? The temperatures are rising here in the South Bay and getting hotter by the day. This isn’t a big deal in most parts of the country. Turn on the air conditionerย and make a cherry cobbler in a mug!
Many homes don’t have air conditioning here in the California Bay Area. Hard to believe, but true. In our house, air conditioning must have been an afterthought with whoever built it. Our tiny unit doesn’t cool our house very well. This easy microwave dessert is easy, but mug cakes have speed on their side!

Flour Blends Tested:
- King Arthur Measure for MeasureโThis blend works really well in my recipes. I don’t have to let the flour blend rest in the batter.
- Bob’s Red Mill 1:1 BlendโThis blend also works well, but this flour blend does benefit from resting the batter for 15 minutes before baking. The rest allows the rice flour in this blend to soften, so you don’t have gritty baked goods.
- My gum-free DIY Gluten Free All Purpose Flour Blend.

- Gluten free flour blend – I tested this recipe using the above three flour blends. That doesn’t mean others will not work; I just have not tested other flours.
- If your gluten free flour blendย doesnโt contain xanthan gum or guar gum, please add 1/4 teaspoon.
- Almond flour – I highly suggest using almond flour and not almond meal. Almond meal is more coarse and will make your mug cake grainy.
- Non-dairy milk – I used almond milk, but other dairy-free types of milk will work. I do not recommend canned coconut milk.

Step 1: Add your dry ingredients to a bowl and whisk to blend.

Step 2: Add the wet ingredients and whisk to blend.
Step 3: Pour the cherries into the bottom of the mug.ย Use fresh, frozen, or canned cherries.
Step 4: Pour the cobbler batter over the cherries. Microwave for 90 seconds. Don’t be surprised if the cobbler cooks a little over the glass. When I make this cobbler in a mug, you may want to put a plate under the mug.ย
Step 5: Top with whipped cream or vanilla ice cream.
Frequently Asked Question:
Yes, you can use frozen cherries. The taste is the same if you use frozen or fresh cherries.
Any mug is fine, but make sure it isn’t too small. You want the batter to be no higher than 1/3 from the top of the mug.
It can be baked in the oven, though most want to bake something larger. If you want to bake in single-serving portions, bake in ramekins at 350ยบ F for 15-20 minutes.
You can definitely use canned cherries to make this mug cobbler.

Gluten Free Cherry Cobbler Mug Cake
Ingredients
- ยผ cup chopped fruit more if you use a large mug
- ยผ cup gluten free flour blend * see note
- 2 tablespoons almond flour * see note
- 1 tablespoon + 1 teaspoon brown sugar
- 1 teaspoon pure vanilla extract
- 1 egg size large
- ยผ cup non-dairy milk
- โ teaspoon ground cinnamon

Instructions
- In a microwave safe mug, add fruit.
- Sprinkle with 1 teaspoon brown sugar.
- In a bowl, add dry ingredients and mix well.
- Add egg, brown sugar, vanilla, and dairy free milk.
- Stir well.
- Pour on top of fruit.
- Microwave (with a plate underneath) for 90 seconds.
- Cake will be hot so allow to cool.
- Top with ice cream, whipped cream, or eat alone.
Notes
- I have tested this recipe with King Arthur Measure for Measure GF and Bob’s Red Mill 1 to 1 GF blend. That doesn’t mean others will not work, I just have not tested other flours.
- If your gluten free flour blend doesnโt contain xanthan gum or guar gum, please add 1/2 teaspoon.
- I highly suggest using almond flour and not almond meal. Almond meal is more coarse and will make your cobbler grainy.
- To make this nut-free, omit the almond flour and add an additional 1 TBSP gluten free flour blend.
- Make sure the cherries have no pits! You can use fresh, frozen, or canned cherries.
SPECIAL NOTE
Please know that every gluten free flour blend has a different starch to grain ratio. If you use a blend I didn’t test, you may need to adjust your moisture levels in your baked goods.
