Over the past month, I have been trying to make more healthful, but fun desserts because Mr. Fearless Dining has been balking. He is eating too many sweets of mine and he has put on a pound or two. Yep, that is definitely my fault.

It really isn’t my fault. I feel like I have been on a roll lately. The dessert recipes I have been creating have been really good…and it has been spurring me on to create and bake a lot more often. I also haven’t heard any complaints from my kids :-).
Well, the news is Mr. Fearless Dining is out of town for a meeting so it is time to be bad! We hope you like these gluten free shortbread cookie bars as much as we do.
This easy gluten free shortbread recipe is AMAZING!
I did try to make this gluten free shortbread recipe “a little bit” healthy. Keep reading for a few suggestions change them up.
- I used coconut sugar instead of refined sugar. Feel free to use brown sugar instead.
- I used almond flour and pecans to add a little protein to balance out that sugar buzz. You can omit the nuts, but you may need a little extra flour if you do.
- If you love gluten free shortbread, it is so easy to create all sorts of recipes using this shortbread recipe as a base.
But honestly, there is only so much I can do about the butter. To make a real shortbread cookie bar, nothing else is really equal when trying to get that buttery flavor.
Now, the only challenge left for the kids and me is to eat all of these before he comes back! Wish you all lived closer to me so I had easy ways to give my gluten free baking away!
How to make gluten free shortbread bar cookies:
I bake this recipe for a little while before adding the peanut butter cups. This way the peanut butter cups don’t totally melt into a liquid goo.

Things You Need to Make This Recipe:
Easy gluten free short bread bars with peanut butter cups and pecans.
Preheat the oven to 350 degrees.
Spray coconut oil (or other cooking spray) to coat an 8x8 baking pan.
In a medium bowl, combine flour, xanthan gum, coconut sugar, and melted butter.
Pour into baking pan and flatten to cover the bottom.
Bake for 20 minutes.
In the same bowl, add condensed milk, vanilla, and pecans.
Pour over the shortbread and bake for 15 minutes.
Remove from the oven and sprinkle the mini peanut butter cups on top of the bars.
Bake another 5 minutes.
Let cool before cutting into bars.
