You can find Franz gluten free bread, bagels, buns, and more on their website, or Costco Stores in the Bay Area, Midwest, and Northwest.

Ingredient notes:

  • Gluten free bread – Franz gluten free breads are perfect for stuffing. I recommend Mountain White or their 7 Grain if you want whole-grain bread.
  • Sausage – I used chicken sausage, but you can use any meat sausage. Crumbled is better than sausage in a casing because the flavor of the cooked sausage spreads more with the other vegetables in the pan.
  • Fresh herbs – fresh is best in this recipe, but you can use dried if you can’t find fresh.
  • Onion – I like to use sweet onions in this recipe. For a fun swap, you can use leeks instead of onion for a more subtle onion flavor.

Recipe step-by-step directions:

Step 1: Place the loaf of bread on a cutting board and cut it into cubes. You can vary the size of your cubes. I like to use 1″ to 1 ½″ size cubes. Bake the cubes to get them crisp.

Step 2: In a pan, heat oil on medium heat. Add butter or light oil, chicken sausage, onion, and garlic until the sausage is cooked and the onions are clear. (This will depend on the brand of sausage you use.)

Step 3: Grab fresh herbs like thyme, rosemary, and sage. These are my favorite herbs that really accent the flavor of turkey. Add fresh herbs, salt, and pepper to the pan and cook for 2 more minutes.

Step 4: Add bread cubes, sausage mixture, melted butter, and broth to a large bowl and toss to coat. Place the gluten free sausage stuffing mixture into a baking dish and bake for 25-30 minutes.

How do you make this ahead for Thanksgiving?

To meal prep and make this gluten free stuffing ahead of time, chop up your bread cubes and put them into an air-tight container. If you are prepping these more than 1 day ahead, put the container into the refrigerator.
Cook the sausage, onion, and herb mixture and put this into a container. Add the bread cubes and sausage mixture to a large bowl on Thanksgiving. Pour on the broth, mix, and bake according to the recipe directions.

Can you use pork sausage?

You can easily swap out the chicken sausage for pork sausage if you prefer. Because pork sausage is fattier, make sure to drain off some of the grease before adding to the bread cubes.

Can you make this stuffing vegan?

You can definitely make this vegan by using vegan butter, vegetable broth, and optional meat-free sausage.

How long will this stuffing last?

Ingredients
  

  • 1 loaf gluten free bread
  • 10 ounces raw chicken sausage
  • 1 onion
  • 1 clove garlic
  • 1 â…“ cups chicken broth
  • 1 teaspoon salt
  • ¼ teaspoon pepper
  • 2 tablespoons fresh thyme
  • 1 tablespoon fresh rosemary
  • 1 tablespoon fresh sage
  • 4 tablespoons butter melted
  • 1 tablespoon avocado or light oil

Instructions
 

  • Preheat the oven to 350º F.
  • Cut the loaf of bread into 1 inch cubes on a cutting board.
  • Place the bread cubes into a 9×13 baking dish and bake for 10 minutes. Stir and bake an additional 5 minutes. Pour bread cubes into a large bowl.
  • In a skillet, add the onion, oil, and garlic. Sauté for 3 minutes. Add the raw sausage and cook until the sausage is cooked.
  • Add fresh herbs to the sausage mixture and cook an additional 5 minutes.
  • Pour the sausage mixture, chicken broth, and melted butter onto the bread cubes and mix well.
  • Put the stuffing mixture back into the 9×13 pan and bake for 20 minutes until done.

Notes

  1. You can use any brand of gluten free bread you like for this recipe.
  2. I use chicken sausage but you can use beef or pork sausage if you like.
