If you have been following my blog for a while, you know we love Foster Farms Chicken and that I use it weekly when making family meals. Their air-chilled chicken is full of flavor.

If you aren’t familiar with air chilling, it is a special process of cooling the chicken without using water. This means chicken doesn’t absorb water, so you don’t get diluted chicken juices.

Air chilling has many benefits, including better taste and texture, and it cooks much faster, making it perfect for those busy weeknights!

The secret of this recipe is garlic butter, lots of it. This allows the flavor to cook in the chicken while keeping it moist.

For this recipe, I don’t use chicken sauce. I let the chicken sit with melted butter, lemon, garlic, salt, and pepper for about 15 minutes, then continue to baste the chicken breasts in this mixture as it grills.

One of the stars of this recipe is the grilled peaches. I love to grill fruit and include it in recipes. Grilling caramelizes the natural sugars in the fruit, and the flavors combine beautifully in this grilled chicken recipe.

What you need to make this recipe:

  • Thinly Sliced Chicken Breasts
  • Butter – use vegan butter if you are dairy-free
  • Garlic – freshly minced or jarred minced garlic are both fine to use.

Recipe step-by-step directions:

Step 1: Remove the chicken and place it on a plate. Add salt and pepper.

Step 2: Brush the chicken with melted butter and garlic. Allow the chicken to sit for 15 minutes. While you are waiting, preheat the grill. Add sliced peaches to your grill and grill for 3 minutes on each side.

Step 3: Add the chicken to the grill. Baste the chicken with more of the melted butter and garlic mixture.

Step 4: Grill the chicken for 5 minutes, then turn it over and grill it for another 5 minutes. Check the internal temperature. When your chicken is 165 degrees F, your chicken is done grilling.

Ingredients
  

  • 1 pound thinly sliced chicken breasts
  • 2 large peaches sliced
  • 1 tablespoon lemon juice
  • 2 cloves garlic minced
  • 2 tablespoons butter
  • 4 hamburger buns
  • 1 tablespoon mayonnaise
  • ¼ teaspoon salt
  • â…› teaspoon black pepper
  • ½ cup lettuce

Instructions
 

  • Preheat your grill to 400º F. See my notes below for stovetop grilling instructions.
  • Place the raw chicken on a plate and salt and pepper both sides.
  • In a small bowl, melt the butter and garlic together.
  • Brush onto both sides of the chicken and allow to sit 15 minutes.
  • Slice peaches and put aside on a plate.
  • Add the chicken to the grill and cook 5 minutes each side. Next, grill the peach slices for 2 minutes each side and remove from the heat.
  • Check the internal temperature of the chicken to ensure it is 165º F when done.
  • Top your burger with the grilled peaches.

1. If you are trying to keep this low calorie, you can use olive oil and garlic instead of garlic butter.
2. These grilled chicken filets will keep up to 4 days in an air-tight container, or up to 4 months in the freezer.
To cook stovetop:
Heat a grill pan or cast-iron skillet. Follow the same directions but cook on the pan for 5 minutes, then flip the chicken over. It may need more time depending on how thick your chicken filets are. You want the internal temperature to read 165º F when they are fully cooked.

SPECIAL NOTE

Please know that every gluten free flour blend has a different starch to grain ratio. If you use a blend I didn’t test, you may need to adjust your moisture levels in your baked goods.

  1. I’m having trouble finding bread, buns, etc that aren’t too dense. I have even tried making some bread but haven’t had success yet. Do you have any suggestions that you like the best?

    1. Hi Sharon, I love Franz and Trader Joe’s brands…also Canyon Bakehouse. The secret is to pop the buns in the microwave for 25-35 seconds. It softens the buns right up!

  2. This looks amazing. I can’t wait to make it. I have a citrus allergy also. Any suggestions on what to use to replace the lemon. I was thinking balsamic vinegar glaze but, I’m not sure. I would be using vegan butter too.
