My daughter and I were brainstorming fun ways to make food flowers after she saw this apple rose pastry recipe on the internet. It is darn near impossible to create a gluten free puff pastry dough to work well enough to pull that apple rose recipe off…so we came up with our idea.

This recipe is easy because you cook the potatoes in a muffin tin. If you are really, really craving bacon, you could also make bacon roses :-). This recipe is perfect for those with food allergies or special diets! We love that this is keto, gluten free, soy-free, nut-free, and dairy-free!

Step-By-Step Directions:

Step 1: Use a mandolin slicer to cut your potatoes lengthwise into thin strips. This is my very favorite potato slicer. It makes the potatoes all the same size.

Step 2: My potatoes were really large, so we cut the slices in half. We lined them up, and then we added bacon on top.

Step 3: Very carefully, roll the potato and bacon.

Step 4: Put them into a muffin tin so they hold their rolled shape while baking.

You can use any bacon you like in this recipe. The key is the smokey flavor you get while the flavor roasts into the potatoes.

These bacon roses should keep up to 3 days in your refrigerator. Store in an airtight container. To re-crisp them, heat them in the oven at 325º ° F for 10 minutes.

Ingredients
  

  • 3 cups worth of whole potatoes *See note
  • 1 pound raw bacon * See note

Instructions
 

  • Preheat the oven to 375º F.
  • Use the vegetable mandolin to thinly slice the potatoes the long way.
  • Slice the potato slices in half like the photograph above.
  • Lay out 4 potato slices and top with a slice of bacon. Carefully roll and place in a muffin tin hole.
  • Bake 25-30 minutes until the outer layer of potato is crispy. Serve hot.

Notes

  1. I recommend using large russet potatoes. Their flavor and ability to crisp work really well in this recipe.
  2. Peeling the potatoes is optional. I do not peel mine, so the edges have a nice dark rim from the peels.
  3. Make sure your bacon is gluten-free. Applegate and Boar’s Head are two of my favorite brands to use.
  4. Store in an airtight container in your refrigerator for up to 3 days.

SPECIAL NOTE

Please know that every gluten free flour blend has a different starch to grain ratio. If you use a blend I didn’t test, you may need to adjust your moisture levels in your baked goods.

    1. Hi Joan, I am sure you can make potato roses without. You will need more olive oil to get them crispy since you won’t have bacon grease to crisp them.
