Have you tried a kumquat? It is a tiny orange that has a softer rind. You eat the whole thing, rind and all. Occasionally, there is a seed; you can eat it or spit it out. I truly feel kumquats are underused in the baking world, and I am excited to share this recipe as a great introduction to enjoying kumquats.

I picked up a big bag of kumquats from the farmer’s market and wanted something simple yet special-this butter was such a delicious surprise. It’s an easy kumquat recipe that only takes a few ingredients, and it’s a great way to add a pop of sunshine to your breakfast or brunch.

A Note From My Kitchen

I don’t post many of my sauce and spread recipes on the blog, but this one is too good not to share with you. A neighbor’s tree was full of kumquats, and I needed to find a way to use them. This homemade butter is made for slathering on biscuits, pancakes, and bread. It is easy to make in minutes, and there is no need to peel the kumquats!

  • Butter – I recommend using unsalted butter.
  • Kumquats – Fresh kumquats are available in the winter when citrus is in season.
  • Honey – You can use any variety of honey. I prefer wildflower honey in this recipe; I recommend avoiding stronger flavors of specialty honey, as they can overpower the kumquat flavors.
  • Lemon – Adding a little lemon juice helps prevent the butter from browning and adds a little flavor.

How To Make Kumquat Honey Butter:

Step 1: Wash the kumquats in a colander. Move them to a cutting board and use a sharp knife to chop them into thin pieces. I recommend removing the seeds.

Step 2: Place the kumquats in a small saucepan with 2 to 3 tablespoons of water. Cook them on low heat until the rinds are softened. Mash them into paste with a fork.

Step 3: Add the room temperature butter, kumquats, lemon juice, a dash of salt (optional), and honey to a food processor or mini Cuisinart.

Step 4: Whip the ingredients until they are creamy, with some of the kumquat rinds visible for flavor and texture.

Step 5: Chill the kumquat honey butter in the refrigerator for 30 minutes. Spread it on rolls, bread, Gluten-Free Biscuits, or even these Gluten-Free English Muffins.

Storage:

Store this creamy kumquat butter in an airtight container in the refrigerator. It will keep fresh for up to a week. This honey butter also makes a great gift if you put it into a small jar.

Instructions
 

  • Rinse the kumquats in a colander. Transfer them to a cutting board and use a sharp knife to slice them into thin pieces. I recommend removing the seeds as you go, as they can be quite bitter.
  • Place the chopped kumquats in a small saucepan with 2 to 3 tablespoons of water. Cook over low heat until the rinds are softened, about 5 to 7 minutes. Use a fork to mash the mixture into a rough paste.
  • Add the softened kumquats, room temperature butter, lemon juice, honey, and a small pinch of salt (optional) to a food processor or mini Cuisinart.
  • Blend until the mixture is smooth and creamy. It’s okay if a few bits of kumquat rind remain. They add nice flavor and texture.
  • Transfer the kumquat honey butter to a container and chill in the refrigerator for at least 30 minutes to let the flavors meld.

SPECIAL NOTE

Please know that every gluten free flour blend has a different starch to grain ratio. If you use a blend I didn’t test, my rule of thumb is to add more flour if your dough or batter is wet and add more liquid if the dough or batter is too dry!
