Have you tried a kumquat? It is a tiny orange that has a softer rind. You eat the whole thing, rind and all. Occasionally, there is a seed; you can eat or spit them out. I truly feel kumquats are underused in the baking world, and I am excited to share this recipe as a great introduction to enjoying kumquats.
I picked up a big bag of kumquats from the farmer’s market and wanted something simple yet special—this butter was such a delicious surprise. It’s an easy kumquat recipe that only takes a few ingredients, and it’s a great way to add a pop of sunshine to your breakfast or brunch.

- Butter – I recommend using unsalted butter.
- Kumquats – Fresh kumquats are available in the winter when citrus is in season.
- Honey – You can use any variety of honey. I like wildflower honey best in this recipe; I recommend staying away from stronger flavors of specialty honey because they can overpower the kumquat flavors.
- Lemon – Adding a little lemon juice helps prevent the butter from browning and adds a little flavor.

Step 1: Wash the kumquats in a colander. Move them to a cutting board and use a sharp knife to chop them into thin pieces. I recommend removing the seeds.
Step 2: Place the kumquats in a small saucepan with 2-3 tablespoons of water. Cook them on low heat until the rinds are softened. Mash them into paste with a fork.
Step 3: Add the room temperature butter, kumquats, lemon juice, dash of salt (optional), and honey to a food processor or mini Cusinart.
Step 4: Whip the ingredients until they are creamy, with some of the kumquat rinds visible for flavor and texture.
Step 5: Chill the kumquat honey butter in the refrigerator for 30 minutes. Spread it on rolls, bread, Gluten-Free Biscuits, or even these Gluten-Free English Muffins.
Storage:
Store this creamy kumquat butter in an airtight container in the refrigerator. It will keep fresh for up to a week. This honey butter also makes a great gift if you put it into a small jar.

- ½ cup unsalted butter room temperature
- ¼ cup kumquats
- 2-3 tablespoons honey
- 1 teaspoon lemon juice
- pinch of salt (optional)

Instructions
- Rinse the kumquats in a colander. Transfer them to a cutting board and use a sharp knife to slice them into thin pieces. I recommend removing the seeds as you go—they can be quite bitter.
- Place the chopped kumquats in a small saucepan with 2–3 tablespoons of water. Cook over low heat until the rinds are softened, about 5–7 minutes. Use a fork to mash the mixture into a rough paste.
- Add the softened kumquats, room temperature butter, lemon juice, honey, and a small pinch of salt (optional) to a food processor or mini Cuisinart.
- Blend until the mixture is smooth and creamy. It’s okay if a few bits of kumquat rind remain—they add nice flavor and texture.
- Transfer the kumquat honey butter to a container and chill in the refrigerator for at least 30 minutes to let the flavors meld.

SPECIAL NOTE
Please know that every gluten free flour blend has a different starch to grain ratio. If you use a blend I didn’t test, my rule of thumb is to add more flour if your dough or batter is wet and add more liquid if the dough or batter is too dry!
