Our family loves movie nights. It is a special family quality time, which is so important; especially when your kids are older. There is no better way for us to get our teens to communicate and be present than when we can spend time together.
We love to eat appetizers when we watch movies, it is like a fun family-bonding exercise. My kids love melted cheese, so I use that to hide a few vegetables :-). If you like to hide veggies too, try these Cheesy Sausage Stuffed Mushrooms, or these Crispy Delicata Squash Fritters.
One of the reasons this hot cream cheese dip is so popular is because it is loaded with cream cheese. It is soft and smooth and readily adapts to the other flavors added in. My picky eater would live on cream cheese if she could!
Here are a few of my family's favorites:
- Take out the spinach (okay, my kids said to write this one!)
- Add caramelized onions
- Add hatch green chiles (if you like your Mexican cheese dip spicy!)
- Add tomatoes
- Add taco meat!
- Frozen spinach
- Frozen corn
- Olive oil
- Garlic, minced
- Sour cream
- Cream cheese
- Cilantro for garnish
This hot cheese dip recipe is super easy to make right on your stovetop!
Cook corn and spinach in a skillet over medium heat.
Can you use canned corn?
You can use fresh, frozen, or canned corn in this recipe. If the canned corn is salted, make sure to reduce the amount of salt you use in the recipe.
Saute the spinach and corn with garlic and olive oil, add cheeses, add salsa, and simmer. Top with cheddar cheese and put into the oven to melt. This is why I love cast iron skillets! They can go from stovetop to oven so easily!

To make this delicious dip, I headed to my local Smart & Final. This store is one of the biggest undiscovered places I know. - 1 cup frozen spinach
- 1 cup frozen corn
- 1 tablespoon olive oil
- 1 clove garlic, minced
- 1/2 cup sour cream
- 8 ounces cream cheese
- 3/4 cup of salsa
- 1/2 cup mozzarella, shredded
- 1/2 cup cheddar, shredded
- salt and pepper to taste
- cilantro for garnish
- In a large skillet, heat olive oil on medium heat.
- Add corn, spinach, and garlic.
- Saute until cooked.
- Add sour cream and cream cheese.
- Cook until these melt, stirring frequently.
- Add salt, pepper, and salsa.
- Stir and reduce heat to low.
- Add mozzarella cheese.
- Simmer 5 minutes.
- Remove from heat, top with cheddar.
- You can melt the cheddar in the oven on broil, or just let the cheese melt from the heat of the dip.
- Dip in corn chips and enjoy
