Add the dry ingredients in a bowl. Whisk to blend them together and then grab the cold butter. I like to use Cup4Cup or King Arthur GF Blend for this recipe.
Place the dough on a piece of wax paper and roll it to 1/4 inch thickness with a rolling pin. It is ok to dust the wax paper with gluten free flour if needed.
Cut the dough into rectangles. Grab your favorite jam or Nutella and put a tablespoon or so onto each square of the dough.
Bake at 350º F for 15-20 minutes (depending on how large you made your pop tarts.) Allow to cool then top with icing and sprinkles. They are freezable too!
