Tis’ the season for all things gingerbread. If you are gluten free, you are in for a special treat. My gluten free gingerbread recipes are so good that nobody will know they are gluten free! My recipes are known for tasting like the real thing, and I test two gluten free flour blends in each recipe, so you have options!

What gluten free flour is good to use in gingerbread recipes?

Choosing what gluten free flour blend to use in gluten free baking is very important. Here are some helpful tips for choosing which gluten free flour blend to use.

  1. Each blend has a different grain-to-starch ratio, which can affect moisture levels in what you are baking. My rule of thumb is if your batter/dough is dry, add more liquid, and if your batter/dough is too wet, add more flour. See below in my Related Reading section for which blends I love for each type of recipe.
  2. You must add one if your gluten-free flour blend doesn’t contain a binder. The easiest one to use is xanthan gum. In most recipes, you would add 3/4 a teaspoon. You can read more about binders and why they are important below in my Related Reading section.
  3. Many 1:1 blends don’t work in yeast recipes. Check the manufacturer’s website to see if your blend will work in yeast recipes. Many companies put this information on the website, but not the bag of flour.

How do you store gluten free gingerbread cookies, cake, and cupcakes?

I recommend storing gluten free baked goods in an airtight container in the refrigerator. Gluten free doesn’t have all of the preservatives that wheat products have, and gluten free baked goods tend to spoil quicker.

If you will not eat all of what you baked within 2-3 days, I recommend freezing them. I always test my recipes in the freezer to ensure they freeze very well. I store things in either a freezer-safe container or a zipper bag.
