This week is all about easy holiday entertaining. I feel like the holidays are so hectic and busy; it makes a huge difference to me to have appetizer recipes that are quick and easy to put together. It lessens my stress load, which leaves me a much happier person.
Have you ever tried fondue? It is a hot creamy cheese dip that originated in Switzerland. You can dip all sorts of delicious things into the hot cheese like bread and vegetables.
For our holiday party, I made this delicious creamy gluten free spinach and leek fondue. It is full of gruyere cheese, one of my favorites."

I also love to make these yummy gluten free meatballs for our friends. You can even dip them into the fondue!

If you have been reading my blog for a while, you know I am all about easy recipes. This easy fondue recipe is no exception!
You can dip vegetables or even this delicious gluten free baguette by Schar that I found at our local grocery store. Just bake it for 5-8 minutes and it gives you that amazing crispy outside, something that those who are gluten free often miss.

Are you ready to make this delicious gluten free cheese fondue?
Instructions:

Step 1: In a pan, sauté the leeks and garlic in a pan with butter. Allow caramelizing, about 5 minutes.
Step 2: Add the leeks and garlic to the fondue pot.
Step 3: Add your cheeses and the rest of the ingredients to the fondue pot and allow it to melt. While the cheeses are melting, chop vegetables and slice a gluten free baguette for dipping!
Recipe FAQ:
Most melting cheeses work well in a fondue but the two most commonly used are gruyere and emmetel cheese.
If your fondue becomes too watery, you can thicken it by keeping it in the fondue pot so some of the moisture evaporates out. You can also add a little gluten free flour or tapioca starch.
LOL, my teens do this all of the time. Cut up steak, chicken, turkey, meatballs…they all are perfect to dip into cheese fondue.
Overcooking your fondue can make it turn out stringy. If your fondue is stringy, you can add a little cornstarch or tapioca starch and water to the fondue and mix it well.
You can easily make this gluten free cheese fondue without wine, but you will need to add a little liquid in its place. Note the dry white wine adds a lot of flavor to the fondue and this recipe calls for only a small amount.

There are so many things you can dip into fondue. Here are some of my favorites:
- Bread
- Carrots, Broccoli, Cauliflower
- Steamed Snow Peas
- Salami
I also want to put an unsolicited plug for this fondue pot. Mine has lasted for years. My favorite feature is that I can adjust the temperature so I can use it for meats, cheese, or a creamy chocolate dessert fondue.

Gluten Free Spinach Cheese Fondue
Ingredients
- ½ pound gruyere cheese shredded or cubbed
- ½ pound mozzarella cheese shredded or cubbed
- 2 tablespoons gluten free flour blend
- 1 teaspoon salt
- 1 cup cooked spinach
- 1 cup dry white wine
- 1 large leek sliced thinly
- 2 tablespoons butter
- 1 clove garlic minced
Instructions
- Chop cheese into cubes and toss with the gluten free flour blend to coat.
- In a pan, sautee the spinach, leeks, and garlic with a tablespoon of butter.
- Add salt and cook until tender.
- In a sauce pan, add cheese, butter, wine and cooked vegetables.
- Cook on low heat, stirring frequently.
- Cook until all of the cheese is melted.
- Serve warm in fondue pot with vegetables and bread.

When I was growing up my mom had a fondue pot. We loved it! How do I not remember to get one? I actually clicked on your link but it didn't work. Let me know if you have a link i can use I may order my own pot. Love the idea of the adjustable temperature. Mom's was rather difficult to heat properly if memory serves. This recipe looks so fun for appetizers at a party!
