I am really excited about this recipe for zucchini chips because my family loves them. You must understand that zucchini is a tough sell in the Fearless Dining home unless it is in something sweet like my Gluten-Free Zucchini Bread or Gluten-Free Zucchini Muffins. I think it is a combination of the flavor and crispiness that made even my picky eater devour them!
These homemade zucchini chips are perfect for a party, game day, or when you want a “better for you” appetizer. These chips fry nice and crispy, so they have a lot less oil than pan frying in oil!

- Zucchini – Use either zucchini or summer squash in this recipe.
- Gluten-Free Bread Crumbs or Panko – You can use store-bought gluten free bread crumbs or panko. There are several gluten-free options, including Aleais, Schar, Kikoman, Good and Gather, and Katz. It is easy and cheaper to make them from scratch with my Gluten-Free Bread Crumbs recipe.
- Nutritional Yeast – Nutritional yeast adds flavor and healthy nutrients to make the flavors in this recipe even better.
- Eggs – I used size large eggs to make this recipe.
- Salt and Pepper – Use to taste.

This is a very simple recipe if you need to swap some ingredients. Here are some common swaps for this recipe:
- Swap the nutritional yeast for grated parmesan. If you are not dairy-free, this is a tasty flavor boost.
- Swap the eggs for Just Egg liquid egg replacer. This will make this recipe vegan if you use the nutritional yeast.
Tips For Success
1. Preheat the air fryer so it is warm when you start air frying the zucchini chips. It will help make the fried zucchini crispier.
2. When the zucchini are done cooking, they are hot. Use a small spatula to lift them out of the air fryer.

I use the Ninja Foodi Air Fryer. It is a great air fryer and is easy to clean.

Step-By-Step Photos and Directions:
Step 1: Prepare the zucchini. Wash the zucchini and place it onto a cutting board. Cut the ends of a zucchini with a sharp knife. Slice it into circles about 1/4 inch wide. Sprinkle a little salt on them after dabbing the zucchini dry with the paper towel. The salt will help dry the zucchini slices further so your zucchini chips turn out crisper.
๐ Sandi Says: Use a paper towel to pat the slices so they don’t have extra moisture. I usually dab them in bunches and then flip them to get the other side. The excess moisture can cause the egg and coating not to stick as well.
Step 2: Prepare the crispy coating. Add the bread crumbs, nutritional yeast, salt, and pepper in a medium-sized mixing bowl. Whisk the mixture to blend it well.
Step 3: Whisk the eggs in a small mixing bowl. Add the zucchini slices, a few at a time, into the egg mixture. Stir the zucchini so they are all evenly coated.
Step 4: Coat the zucchini in the egg mixture. Lift each slice out of the egg with a fork and place it in the coating. I will do this with three zucchini at a time to speed up the process.

Step 5: Before you start, spray a light coating of cooking oil on the air fryer tray. Coat both sides of the zucchini slices in the crumb mixture and place them in the air fryer.
Step 6: Repeat this process until the air fryer tray is full, be sure that the zucchini chips are not touching each other. Spray the chips with a light oil to help them crisp.
Depending on how many zucchini chips you make, you may need to cook several batches in your air fryer to cook them all.
Step 7: Air fry the zucchini chips at 375ยบ F for 10-12 minutes. Flip them over 6 minutes into cooking so they cook evenly on both sides.
Remove the cooked chips and cook more batches if needed. Serve the zucchini chips hot for the best flavor.

Storage and Reheating:
Store the leftover fried zucchini in an airtight container in the refrigerator. To reheat them, air fry them at 350ยบ F for 2-3 minutes. This will help re-crisp the chips.
I do not recommend freezing the leftovers because they will get mushy.

Please know that every gluten free flour blend has a different starch to grain ratio. If you use a blend I didn’t test, my rule of thumb is to add more flour if your dough or batter is wet and add more liquid if the dough or batter is too dry!
