Spiralized Purple Carrot Salad with Cilantro

This delicious crisp spiralized purple carrot and cilantro salad is a delicious root vegetable salad that even our kids loved.

Purple Carrots

Have you seen those big beautiful purple carrots?

Many people will ask where to buy these purple carrots because they are so vibrant. Go check your farmer’s markets and grocery stores. Our farmer’s market had several vendors selling these. You can also find them at Whole Foods and Trader Joes! These carrots are heirloom carrots, which means their seeds have been passed down over many generations. Heirloom seeds are open-pollinated, not artificially, making them more natural.

The carrots I found were a deep purple on the outside, then a bright orange yellow on the inside.

I knew these would be fun to spiralize. Here is another delicious spiralized recipes to try. Daikon Green Apple Salad.

See those fun colors? I love that some of the bright yellow color is in the salad too! My kids loved this rainbow salad, even my picky child. If you haven’t used a spiralizer yet, this is a great way to make vegetables fun for kids.

Ooops, I forgot to take a picture of my purple carrots in the spiralizer, however this photo gives you an idea of what it looks like. You get tons of delicious curly cue pieces of vegetable.

Easy to make in one bowl

Add all of the ingredients in one bowl and added the dressing ingredients to the same bowl. Toss so that everything mixed together. I used an elderberry infused balsamic vinegar for my recipe. If you can’t find this in your store, check out Trader Joe’s. They have a delicious pomegranate balsamic vinegar that tastes delicious in this purple carrot salad recipe too.

Look at all of those curly purple carrots! I need to spiralize another one and make crispy carrot fries out of it!

Things You Need To Make This Recipe:

  1. This spiralizer is my favorite brand. I have tried hand held versions, and they just fell apart.
  2. A big bowl to mix this together in. The rubber bottom prevents the bowl from sliding around.

Spiralized Purple Carrot and Cilantro Salad

Yield: 4 people
Prep Time: 15 minutes
Total Time: 15 minutes
This is a delicious easy kid-friendly purple carrot salad recipe.

Ingredients

  • 3 very large purple carrots or 4 medium sized
  • 1 tablespoon avocado oil
  • 3 tablespoons elderberry infused balsamic vinegar, You can also use another fruit infused vinegar
  • 1/4 cup raw sunflower seeds (unsalted)
  • 3 tablespoons chopped fresh cilantro

Instructions

  1. Spiralize the carrots into a bowl. Add all ingredients. Toss to coat.
