Summer is here, and it has been too hot to use our oven! This easy gluten free cherry cobbler mug cake will hit the spot. Fresh juicy cherries and a delicious cake-like cobbler topping will make you want to make this dessert over and over again.

This simple cobbler is made in your microwave and is ready in under 3 minutes. What better way to satisfy that cobbler craving?

The temperatures are rising here in the South Bay, and it is getting hotter by the day. In most parts of the country, this really isn’t a big deal. Turn on the air conditioner and make a cherry cobbler in a mug!

Many homes don’t have air conditioning here in the California Bay Area. Hard to believe, but true. In our house, air conditioning must have been an afterthought with whoever built it. Our tiny unit doesn’t cool our house very well.

The biggest rule when it is hot is “DO NOT” use your oven. We have microwave mug cakes for these days. Check out this Gluten Free Chocolate Mug Cake or this Easy Gluten Free Lime Mug Cake recipe.

Why Mug Cakes Are Great:

  1. The best thing about mug cakes is that they are EASY. Dump the ingredients into a mug and turn on the microwave.
  2. No-bake dessert is easy, but mug cakes have speed on their side!
  3. You can use any fruit! This dessert works with any fruit, so experiment with peaches, blueberries, apples, etc., and have some fun!

  5. With this dessert, the house is not heating up, and you get the same great taste of an oven-baked cobbler.

Tips and Recipe FAQ:

Can you use frozen cherries in this recipe?

Yes, you can use frozen cherries. The taste is the same if you use frozen or fresh cherries.

What mug is best for making mug cakes?

Any mug is fine, but make sure it isn’t too small. You want the batter to be no higher than 1/3 from the top of the mug.

Can this be baked in the oven?

It can be baked in the oven, though most want to bake something larger. If you want to bake in single-serving portions, bake in ramekins at 350º F for 15-20 minutes.

Can you use canned cherries?

You can definitely use canned cherries to make this mug cobbler.

Notes

  1. I have tested this recipe with King Arthur Measure for Measure GF and Bob’s Red Mill 1 to 1 GF blend. That doesn’t mean others will not work, I just have not tested other flours.
  2. If your gluten free flour blend doesn’t contain xanthan gum or guar gum, please add 1/2 teaspoon.
  3. I highly suggest using almond flour and not almond meal. Almond meal is more coarse and will make your cobbler grainy.
  4. To make this nut-free, omit the almond flour and add an additional 1 TBSP gluten free flour blend.
  5. Make sure the cherries have no pits! You can use fresh, frozen, or canned cherries.

SPECIAL NOTE

Please know that every gluten free flour blend has a different starch to grain ratio. If you use a blend I didn’t test, you may need to adjust your moisture levels in your baked goods.

  1. Hi Sandi. I will be making one of your Mug cakes soon, but wanted to verify if it’s correct that there is no oil or butter in the Cherry Cobbler version? And no leavening? And no leavening in the Blueberry one?. Those are the 2 flavors I am considering. Do these flavors just not need them?

    1. Hi Lynn, I updated this recipe a few weeks ago, but never deleted the oats from the suggested products list. This has been fixed. Thank you so much for pointing this out.
