This simple cobbler is made in your microwave and is ready in under 3 minutes. What better way to satisfy that cobbler craving?

The temperatures are rising here in the South Bay, and it is getting hotter by the day. In most parts of the country, this really isn't a big deal. Turn on the air conditioner and make a cherry cobbler in a mug!

Many homes don't have air conditioning here in the California Bay Area. Hard to believe, but true. In our house, air conditioning must have been an afterthought with whoever built it. Our tiny unit doesn't cool our house very well.

The biggest rule when it is that hot is "DO NOT" use your oven. We have microwave mug cakes for these days. Check out this Gluten Free Chocolate Mug Cake or this Easy Gluten Free Lime Mug Cake recipe.

Why Mug Cakes Are Great:

  1. The best thing about mug cakes is that they are EASY. Dump the ingredients into a mug and turn on the microwave.
  2. No-bake dessert is easy, but mug cakes have speed on their side!
  3. You can use any fruit! This dessert works with any fruit, so experiment with peaches, blueberries, apples, etc. so have some fun!
  4. If you love mug cakes, you will want to try this Gluten Free Vanilla Mug Cake recipe next!
  5. With this dessert, there is no heating up the house, and you get the same great taste of an oven-baked cobbler.

This is one of my favorite gluten-free flour blends for cookies, cakes, pie crust, biscuits, and muffins! (Do not use this flour blend for yeast recipes.)

Ingredient Notes:

  • Gluten free flour blend - I tested this recipe using my gum-free DIY Gluten Free All Purpose Flour Blend, Bob's Red Mill 1 to 1 Gluten Free Flour Blend, and King Arthur's Measure for Measure Gluten Free Blend. That doesn't mean others will not work; I just have not tested other flours.
  • If your gluten free flour blend doesn’t contain xanthan gum or guar gum, please add ½ teaspoon.
  • Almond flour - I highly suggest using almond flour and not almond meal. Almond meal is more coarse and will make your mug cake grainy.
  • Non-dairy milk - I used almond milk, but other dairy-free types of milk will work. I do not recommend canned coconut milk.

If you love cake as much as we do, you should check out all of the gluten free cobbler recipes on this site.

Recipe Step-By-Step Directions:

Cobbler mug cake dry ingredients in a glass bowl.

Step 1: Add your dry ingredients to a bowl and whisk to blend.

The wet ingredients in a bowl ready to be whisked.

Step 2: Next, add in the wet ingredients and whisk to blend.

Thawed frozen cherries in a mug.

Step 3: Pour the cherries into the bottom of the mug.

The cobbler batter over the cherries.

Step 4: Pour the cobbler batter over the cherries. Microwave for 90 seconds. Don't be surprised if the cobbler cooks a little over the glass. You may want to put a plate under the mug when I make this cobbler in a mug.

A bite of cherry cobbler.

Step 5: Top with whipped cream or vanilla ice cream.

Tips and Recipe FAQ:

Can you use frozen cherries in this recipe?

Yes, you can use frozen cherries. The taste is the same if you use frozen or fresh cherries.

What mug is best for making mug cakes?

Any mug is fine, but make sure it isn't too small. You want the batter to be no higher than ⅓ from the top of the mug

Can this be baked in the oven?

It can be baked in the oven, though most want to bake something larger. If you want to bake in single-serving portions, bake in ramekins at 350º F for 15-20 minutes.

Can you use canned cherries?

You can definitely use canned cherries to make this mug cobbler.

Ingredients

  • ¼ cup chopped fruit more if you use a large mug
  • ¼ cup gluten free flour blend * see note
  • 2 tablespoons almond flour * see note
  • 1 tablespoon + 1 teaspoon brown sugar
  • 1 teaspoon pure vanilla extract
  • 1 egg size large
  • ¼ cup non-dairy milk
  • ⅛ teaspoon ground cinnamon

Instructions

  • In a microwave safe mug, add fruit.
  • Sprinkle with 1 teaspoon brown sugar.
  • In a bowl, add dry ingredients and mix well.
  • Add egg, brown sugar, vanilla, and dairy free milk.
  • Stir well.
  • Pour on top of fruit.
  • Microwave (with a plate underneath) for 90 seconds.
  • Cake will be hot so allow to cool.
  • Top with ice cream, whipped cream, or eat alone.

Notes

  1. I have tested this recipe with King Arthur Measure for Measure GF and Bob's Red Mill 1 to 1 GF blend. That doesn't mean others will not work, I just have not tested other flours.
  2. If your gluten free flour blend doesn’t contain xanthan gum or guar gum, please add ½ teaspoon.
  3. I highly suggest using almond flour and not almond meal. Almond meal is more coarse and will make your cobbler grainy.
  4. To make this nut-free, omit the almond flour and add an additional 1 tablespoon gluten free flour blend.
  5. Make sure the cherries have no pits! You can use fresh, frozen, or canned cherries.

SPECIAL NOTE

Please know that every gluten free flour blend has a different starch to grain ratio. If you use a blend I didn't test, you may need to adjust your moisture levels in your baked goods.

Hi Sandi. I will be making one of your Mug cakes soon, but wanted to verify if it's correct that there is no oil or butter in the Cherry Cobbler version? And no leavening? And no leavening in the Blueberry one?. Those are the 2 flavors I am considering. Do these flavors just not need them?

I've tried several of your mug cake recipes, and they are all good. But this one is my personal fave.

Oats are not listed in the recipe ingredients. How much is called for?

Hi Lynn, I updated this recipe a few weeks ago, but never deleted the oats from the suggested products list. This has been fixed. Thank you so much for pointing this out.
