This easy slow cooker chuck roast is a family favorite. It has just five ingredients and no extra steps. No browning or searing required, it is the ultimate dump-and-go comfort food. I have tested it multiple times to make sure it turns out flavorful and satisfying, even without the extra prep. It’s perfect for busy weeknights or weekend batch cooking!

Pot roast is typically braised and then slow-cooked, so it becomes tender, almost melting in your mouth. I am a bit lazy, so my roast recipe is not braised. As you can see below, I just dumped it all into my slow cooker. If you have a tough cut of meat, this is the best way to make it tender.

- Chuck Roast – Use beef chuck roast or top round. Both will turn out delicious!
- Diced Tomatoes – I prefer to use plain canned diced tomatoes without the green chiles. If you have a can of Rotel, it makes a great swap for diced tomatoes.
- Onion – Use sweet yellow onions because they add the best flavor.
- Beef Broth – Use regular or low-sodium for this recipe. Just remember to salt to taste!
- Fresh or Dried Herbs – Such as thyme, salt, pepper, and basil, as spices. Remember, if you use dried herbs, you need fewer than fresh ones.
- Vegetables are completely optional, but I like to add cut-up potatoes and carrots, so they slow cook with all the delicious pot roast meat juices.
A Note From My Kitchen
I tested this recipe using a 2-pound chuck roast in my 6-quart slow cooker. I made versions both with and without added vegetables, and both turned out incredibly flavorful. While many roast recipes call for searing the meat first, I skipped that step entirely to save time. After several tests, the meat still turned out tender and full of flavor. This is truly a dump-and-go dinner!
How to Make Slow Cooker Chuck Roast (Step-by-Step)

Step 1: Cut the onions and vegetables. Here are some of my favorite vegetables to add:
- Carrots
- Potatoes (white and sweet potatoes)
- Fennel
- Parsnips
Step 2: Add the meat and all of the other ingredients to your Crock Pot.
Step 3: Cover and cook on the low setting for 6 hours or the high setting for 4 hours. If your slow cooker has a setting to cook on high and automatically switches to low, you can also use this feature.
Tips For Success
1. Slow cook on low for 6 hours or on high for 4 hours.
2. There is some variance in temperature between slow cooker brands. If you notice your roast needs more liquid, it is okay to add more.
3. You do not need to trim the fat off the chuck roast unless you want to.`
When the meat is finished cooking, it is a good idea to double-check the internal temperature with a meat thermometer to make sure the meat is fully cooked. You want your chuck roast to be between 150-160ºF.
Storage and Freezing Tips:
- Store all leftovers in an airtight container in your refrigerator. They will keep fresh for up to 4 days.
- You can also freeze leftovers in a freezer-safe bag or container.
- To thaw, place the frozen meat in a skillet and cook until it is completely defrosted and warmed through. You can also reheat it in your microwave oven on the defrost setting.

Instructions
- Put a 2 pound chuck roast , 1 can organic diced tomatoes, 1 large onion, 1/4 cup fresh basil leaves, 1 cup beef broth, and salt/pepper to taste in a crock pot.
- Turn on high and cook for 4-5 hours. You can also cook on low heat for 6-7 hours.
- Serve hot with your favorite side dishes.
- Feel free to add vegetables to the crock pot. My kids are not fond of vegetables cooked in the slow cooker, but most kids probably aren't as picky as mine.

- You can easily make this recipe in the oven. Place the meat and ingredients into a Dutch oven. Cover and cook on low 325ºF for 2 hours. Check the internal temperature and make sure the meat is 150-160ºF.
- Feel free to add vegetables like carrots and potatoes!

SPECIAL NOTE
Please know that every gluten free flour blend has a different starch to grain ratio. If you use a blend I didn’t test, my rule of thumb is to add more flour if your dough or batter is wet and add more liquid if the dough or batter is too dry!
