Allergen Information:
This gluten free dinner recipe is dairy-free, nut-free, soy-free, and egg-free. It is free of the Top 8 Allergens! If you love simple recipes, you will also love this Slow Cooker Pulled Pork recipe, too.
Pot roast is typically braised and then slow-cooked, so it becomes tender, almost melting in your mouth. I am a bit lazy, so my roast recipe is not braised. As you can see below, I just dumped it all into my slow cooker. If you have a tough cut of meat, this is the best way to make it tender.
Even without the braising, my easy roast recipe made a delicious dinner our whole family devoured. You may also want to try this slow cooker lemon chicken recipe, too! If you love slow cooker chicken, here are some awesome gluten free slow cooker chicken recipes to try.
Ingredient Notes:
- Chuck Roast – Use beef chuck roast or top round. Both will turn out delicious!
- Diced Tomatoes – I like to grab plain canned diced tomatoes without the green chiles.
- Onion – I like sweet onions best, but yellow onions are also great.
- Beef Broth – Use regular or low sodium for this recipe. Just remember to salt to taste!
- You can use fresh or dried herbs for spices like thyme, salt, pepper, and basil. Remember, if you use dried herbs, you need fewer than fresh ones.
- Vegetables are completely optional, but I like to add cut-up potatoes and carrots, so they slow cook with all the delicious pot roast meat juices.
Tips For Sucess
1. Slow cook on low for 6 hours or on high for 4 hours.
2. There is some variance in temperature between slow cooker brands. If you notice your roast needs more liquid, it is okay to add more.
3. You do not need to trim the fat off the chuck roast unless you want to.`
Step-by-Step Instructions:
Step 1: Cut up the onions and any vegetables you want. Here are some ideas for additional vegetables:
- Carrots
- Potatoes (white and sweet potatoes)
- Fennel
- Parsnips
Step 2: Add the meat and all of the other ingredients to the Crock Pot.
Step 3: Cover and cook on the low setting for 6 hours or high setting for 4 hours. If your slow cooker has a setting to cook on high and switches to low, you can also use this.
When the meat is done cooking, it is a good idea to always double-check the internal temperature with a meat thermometer to make sure the meat is done cooking. You want your chuck roast to be between 150-160 degrees F.
Serve With:
- Air Fryer Green Beans – Use green beans or tri-colored string beans.
- Roasted Mashed Potatoes with Cream Cheese – Amazing with the sauce drizzled on!
- Gluten Free Biscuits – Flaky and delicious!
Recipe FAQ:

These seasonings taste great with all kinds of meat, even chicken! Use what you can find in stores.
You don’t have to brown the meat before cooking or the veggies. This recipe is the easiest!

SPECIAL NOTE
Please know that every gluten free flour blend has a different starch to grain ratio. If you use a blend I didn’t test, you may need to adjust your moisture levels in your baked goods.

Thank you Del…you would be surprised how easy this is.
MMmm pot roasts are the best! You’ve minded me we were given a pot roast cut from a local crofter that is still in the freezer. Local, home grown organic meat. Can’t beat it!
I love that you have sourced a great source for organic meats.
Holy moly that looks good. With a tossed green salad…I am THERE, for dinner!

Horseradish sounds wonderful in a roast recipe.
Pot roast was always my favorite as a kid. My mom would make it sometimes on Sundays, and I always loved that tender juicy meat! I do miss it now as a vegetarain, but this is exactly the kind of dish I like to make for company. Thanks for the recipe, I bookmarked it for later!

This pot roast looks fantastic! I’ve definitely fallen into the slump of using canned soup and powdered dressing mixes on my roasts…. I can just imagine how much better it would taste using fresh ingredients like this!
It is easy to fall into a slump when our families are so busy. Hang in there 🙂
