Ingredient Notes:

  • Beefโ€”I used ribeye because that is what I had on hand. You can use any cut of meat for this recipe, including ground beef! Stew meat is a great budget option!
  • Sweet Yellow Onion – I love sweet yellow onion, but regular onions are fine to use. I have also made this recipe with spring onions.
  • Garlic – I used garlic powder. If you prefer fresh garlic, use two minced cloves.
  • Beef Broth – I used one from Trader Joe’s, but any brand is okay to use as long as it is gluten free.
  • Worcestershire – Many Worcestershire sauces are gluten free. I used Lea and Perrins, which is labeled gluten free.
  • Dijon Mustard – Any brand is fine. You can check my mustard list to make sure it is gluten free.
  • Cornstarch – This is used as a thickening agent for the sauce.
  • Fresh Mushrooms – Any variety is fine. I used cremini mushrooms.
  • Cream Cheese – I recommend full-fat cream cheese. See the Substitutions Section below for cream cheese substitutes.
  • Gluten free noodles or pasta noodles – I find the Jovial gluten free pasta holds up the best in this recipe. Tinkyada also works well.

Substitutions:

  • Substitute the sour cream with Greek yogurt.
  • You can use beef stock instead of beef broth if you prefer.
  • You can swap potato or corn starch if you don’t have tapioca starch.
  • Make it dairy-free using dairy-free cream cheese. Kite Hill and VioLife both make this.

Step-By-Step Photos and Directions:

Do this first: Read the cooking directions for your gluten-free pasta. Each brand’s directions vary slightly. Put up a pot of water to boil on the stove.

Step 1: If you are using steak, place it on a cutting board. With a sharp knife, cut the meat into bite-sized pieces. If you are using stew meat, cut any large pieces into smaller pieces.

Step 2: On another clean cutting board, slice the onion into small pieces. Heat a large pan and cooking oil on the stove with medium heat. Add the chopped onions. Cook for 2-3 minutes until the onions begin to turn clear.

Step 3: Wash and slice the mushrooms on the cutting board. Add them to the onion mixture and cook for 3-4 more minutes. Remove the cooked onion and mushrooms from the pan to a large bowl.

Step 4: Add more cooking oil to the pan and add the meat. If you use ground beef, add it in and chop it with the mixing spoon as it cooks. Frequently turn the meat so it cooks on all sides.

Step 5: Add in the onions and mushrooms, the butter, Worcestershire, dijon, garlic, salt, and pepper. Mix well to coat the meat.

When the water is boiling, add the pasta and cook it for one minute less than the package directions!

Step 6: Pour the beef broth into the pot and stir. Add the cream cheese and continue to simmer the mixture until the cream cheese is melted.

It is time to create the cornstarch slurry. You want to create a slurry before adding the cornstarch to the pan. This eliminates all lumps. Add 3 TBSP of water to a small dish. Add the cornstarch and whisk to blend it. Pour it into the pan. Stir well.

Step 7: Pour the pasta into a colander and rinse with cold water. This will halt the cooking process. Add the cooked gluten free pasta to the meat mixture. Mix it well and serve hot.

If you do not want to cook this recipe with gluten free pasta, you can serve the meat mixture over cauliflower rice, mashed potatoes, or serve the meat mixture over a baked potato.

Cream cheese is thick and creamy, and when combined with a little cornstarch, it helps to thicken the sauce.

Can you add sour cream instead of cream cheese?

You can swap sour cream for the cream cheese. You can also use Greek yogurt in place of the cream cheese.

How do you store leftover beef stroganoff?

Store in an airtight container in the refrigerator. It will keep fresh for up to 3 days. You can freeze the leftovers, but know that gluten-free pasta doesn’t freeze well, so it will defrost and be sort of mushy. For this reason, I do not recommend freezing the gluten free noodles.
