Authentic Foods Steve’s Gluten-Free Bread Blend Ingredients:
As you can see from the back of the package, Steve’s gluten-free flour blend uses some unique ingredients. These special ingredients allow you to make the most intricate breads, elaborate weaves for challah, and perfectly shaped cinnamon rolls.
Steve’s Gluten Free Bread Blend is gum-free, so the ingredients have no xanthan or guar gum. It uses vegetable fiber and psyllium husk as a binder to hold the bread together.
Baking Tips Using Steve’s Gluten-Free Bread Blend:
- You use less of this flour blend in recipes compared to other gluten free flour blends. Although this brand is more expensive than others, it often works out comparably to other custom flour blend brands.
- With gluten-free yeast recipes, you only get ONE good rise from gluten free dough. It is very important to shape your bread before you rise the dough.
- Do not add xanthan or guar gum to the recipe. You do not need it.
- You can use a stand mixer to mix the dough or mix it by hand in a bowl. I recommend using a paddle or bread hook attachment.
- Use measuring cups or a digital scale to measure your flour. If using measuring cups, do not pack the flour in the cup.
- This flour rises very well, so leave room for the dough to double in size.
- Do NOT use this flour blend in a bread machine; it will not work.

Hi Sandy,
I used the Steve’s Bread Flour in your Easy Oat Sandwich Bread recipe and noticed that I had to add more water. I had to add almost a cup more water to the recipe. It is rising now, so I’ll come back to let you know how it turned out. Do you know how much less of the Steve’s blend I would need on your bread recipes?

Hi Nancy, Yes, that blend does need a lot more water than standard 1:1 blends. I haven’t tested that flour blend in my oat bread recipe, so I am excited to hear how it turns out. You did the right thing adding more water.
