If you haven’t tried a portobello mushroom pizza yet, it is time to give them a try. I have to admit; my kids were skeptical about a giant mushroom. THE KIDS WERE MUCH MORE OPEN TO THE IDEA once I added all the pizza fillings and toppings!

These mushroom cap pizzas are low-carb/keto, gluten free, and easy to make dairy-free.

  • Portobello Mushrooms – I like to pick large, firm caps.
  • Pizza Sauce – There are many brands of gluten free pizza sauce, or use one of your own. I include my homemade pizza sauce recipe as well. The good homemade brands I like are Trader Joe’s and Rao’s.
  • Cheese – You can use traditional mozzarella, dairy-free cheese if you are vegan, or have fun with other cheese flavors.
  • Vegetables – Use your favorites.
  • Meats – Pepperoni, sausage, etc. If you use pepperoni or sausage, just read the label to ensure it is gluten-free.

I made these portobello pizzas in my Air Fryer to cut down on calories and fat. You can easily fry these fritters, and I have included directions below. Many often ask which air fryer I use; I primarily use my Ninja Foodi Air Fryer. If I need a larger basket area for a recipe, I use my Corsori Air Fryer.

Air Fryer Directions:

Preheat the air fryer for 5 minutes at 400º F.

Step 1: Wash your portobello mushrooms and remove the stems. Put the portobello mushroom caps in the air fryer. Cook the mushrooms for 5 minutes with no fillings.

🔑 Sandi says: If you have a cracked portobello mushroom, set it at a slight angle in the air fryer away from the crack so the pizza filling doesn’t melt out when the portabello cooks.

Step 2: Add the pizza sauce, pesto sauce, salsa, or any sauce you are using. See below for some awesome flavor suggestions.

Step 3: Add cheese, toppings, and dried basil to each mushroom.

Step 4: Cook the mushrooms for another 5-7 minutes until the cheese is melted and slightly golden. The more toppings you have, the longer it will need to cook.

Serve them hot. Using mushroom caps for pizza adds so much more flavor!

Oven Baking Directions:

No air fryer? No problem! Wash and remove the stem from your portobello mushrooms the same way as instructed above, but bake it at 400º F for 10-12 minutes. Remove them from the oven and drain any liquid. Add your pizza toppings and bake for an additional 5 minutes until the cheese is melted.

Can you eat the underside of a portobello mushroom?

You can definitely eat the underside (or gills) of a portobello mushroom. If you decide you want to remove the gills for this recipe, use a small spoon to scrape them out of the portobello.

How do you wash a portobello mushroom?

I wash the top of the cap in water, rubbing any dirt off with my hand. I then very quickly wash the underside. Shake off the excess water and pat it dry with a paper towel.

How do you store portobello mushroom pizzas?

These portobello mushroom pizzas will keep fresh for up to 3 days in an air-tight container in the refrigerator. I do not recommend freezing these pizzas.
