This all started when I found the cutest mini cast iron skillets when I was out shopping today. They are perfect for a dessert for two! But then again...
Are you a dessert fiend too?? I am sure I have totally corrupted my kids as well because they both inherited my sweet tooth!"
You know me...I am not usually the single-serving type of girl. I like my desserts, and I don't like tiny portions. Luckily, these cast iron skillets hold just the right amount of gluten free brownie to make me happy. (These mini skillets also make a perfect cookie skillet.)
If you love brownies, this homemade flourless chocolate brownie recipe is for you. They have just the right amount of chocolate gooeyness with a splash of mint flavor bursting through.
A recipe for flourless brownies can be made with a lot of different ingredients. The most important ingredients are:
- chocolate or cocoa
- gluten free flour (or they can be flourless!)
- oil or butter
From these basics, you can add all sorts of fun things like chocolate chips, black beans, mint, candy pieces, etc. recipe for flourless brownies

Gluten Free Chocolate Mint Brownies
- 2 large eggs
- 3/4 cup cocoa powder
- 1 cup sugar
- 1 teaspoon vanilla
- 1 teaspoon peppermint extract
- 1/3 cup coconut oil
- Preheat the oven to 350 degrees.
- In a large bowl, add all dry ingredients, including sugar and whisk to blend.
- In a smaller bowl, add wet ingredients and whisk to blend.
- Pour wet ingredients into the dry ingredients (optional add chocolate chips or nuts) and mix.
- Add brownie batter to mini well seasoned cast iron pans, or a greased 8x8 baking dish.
- Bake for 20-22 minutes until done.
