Things You Need to Make This Recipe:
Easy gluten free chocolate mint brownies you can make in mini cast iron skillets
- 2 large eggs
- 3/4 cup cocoa powder
- 1 cup sugar
- 1 teaspoon vanilla
- 1 teaspoon peppermint extract
- 1/3 cup coconut oil
Preheat the oven to 350 degrees.
In a large bowl, add all dry ingredients, including sugar and whisk to blend.
In a smaller bowl, add wet ingredients and whisk to blend.
Pour wet ingredients into the dry ingredients (optional add chocolate chips or nuts) and mix.
Add brownie batter to mini well seasoned cast iron pans, or a greased 8x8 baking dish.
Bake for 20-22 minutes until done.
