Do I need a cast-iron skillet, or will any skillet work?
Any skillet will work in most of these skillet recipes, but if you have to move the pan to the oven, you really do need a cast-iron skillet. They are heat-resistant up to 500ºF.
Are skillets safe for the oven?
Most of my gluten-free skillet recipes can be made in cast iron, stainless steel, or carbon steel pans. If you’re using a nonstick skillet, check the manufacturer’s guidelines first. These are not safe in an oven:
Non-stick skillets with plastic handles – the handles may melt at higher temperatures.
Older Teflon pans – coatings can break down in high heat.
Skillets with wooden handles – wood can crack or burn.
Skillets with silicone handles – usually only safe up to 350 to 400ºF.
Lightweight aluminum skillets – many warp or discolor in the oven.
How do I keep food from sticking to the skillet?
If you are using a cast-iron skillet and take care of it properly, food will not stick to your skillet. If you are using a different type of pan, keeping food from sticking can vary.
Non-stick pans have a coating to help prevent food from sticking. Other popular types of skillets, like hard-anodized pans, can be trickier.
Food tends to stick if the pan is cool, so heat the pan according to the manufacturer’s directions before adding food.
High heat should also be avoided because it can cause foods to stick.
